巧克力口味送给一位可爱的小女生。
巧克力乳酪蛋糕
配方参考 : Lucky Inn
材料 : 8寸圆模
饼干底
Oreo饼干 100g (压碎)牛油 40g (隔水溶化)
巧克力乳酪
奶油乳酪 250g
黄糖 40g
全蛋 1个
鲜奶油 150ml
黑巧克力块 125g (切碎,隔水融化)
无糖可可粉 3tbsp (过筛)
巧克力表层
黑巧克力块 120g (切碎)
牛油 10g
动物性奶油 80g
做法:
1. 将融化牛油和饼干碎混合均匀,铺在模型底部,压平,放入冰箱冷藏至定型备用。
2. 将奶油乳酪搅打至油滑,加入黄糖搅拌均匀。倒入融化巧克力,搅拌均匀。
3. 将蛋液分两次加入,第一次的蛋液必须搅拌均匀之后才加入另一半的蛋液。
4. 鲜奶油和可可粉分次交叉拌入面糊中,倒入Oreo饼上。
5. 水浴法,160C烘烤70分钟。
6. 取出,连同蛋糕模一起在室温下冷却。
7. 将巧克力表层材料,隔水溶化,淋在冷却的蛋糕上,冷藏数个小时后便可切片享用。
Chocolate Cheesecake
Ingredients: 8inch round cake pan
Cake base
100g Oreo biscuits crushed
40g melted butter
Chocolate cheese filling
250g cream cheese
40g brown sugar
1 whole egg
150ml whipping cream
125g dark chocolate,chopped
3tbsp unsweetened cocoa powder,sifted
Chocolate cream
120g dark chocolate,chopped
10g butter
80g whipping cream
Method:
1. Combine crushed biscuits with melted butter. Press into base of the pan. Chill in the freezer compartment for later use.
2. Beat the cream cheese and sugar until smooth,add in melted chocolate,beating again to combine。
3. Gradually add in the whole egg,beat until well combined。
4. Add in the whipping cream and cocoa powder alternately. Fold into the prepared biscuit base.
5. Bake cake using water bath method,160 degrees for 70mins.
6. Remove from the oven,let it cool at room temperature.
7. Double boil the dark chocolate,butter and whipping cream until smooth. Pour it evenly on the top of the chocolate cheesecake. Chill in the fridge for few hours.
