蜂蜜鲜橙燕菜 Orange with Honey Agar-agar


























蜂蜜鲜橙燕菜

材料 :

鲜橙汁  400克
燕菜粉  2茶匙 
蜂蜜  2汤匙
细砂糖  20克或适量


做法: 
 
1. 鲜橙对半切开,把橙汁榨出,挖掉果肉,橙皮留着备用。
2. 橙汁加入蜂蜜,燕菜粉和糖搅拌均勻。
3. 倒入锅里煮滚至糖融化。
4. 把煮好的鲜橙燕菜倒入准备好的橙皮中。
5. 待冷却后,放入冰箱冷藏至凝固即可享用。
 
 
 
Orange with Honey Agar-agar
 
Ingredients :
 
400g pure orange juices
2 tsp agar-agar powder
2 tbsp honey
20g sugar


Method :
 
1. Cut the orange in half,extract the juice.
2. Remove the flesh and reserve the orange shell.
3. Mix orange juices with honey,agar-agar powder and sugar.
4. Pour into a pot,bring to boil till sugar dissolved.
5. Pour the agar-agar mixture into the prepared orange shell.
6. Chill in refrigerator till set.

蜂蜜南瓜汉堡 Honey & Pumpkin Burger







在上个周末,想起早前看到MayAunty Young家的诱人汉堡,
冰箱里也有冷冻着南瓜泥,材料准备好, 正可做这蜂蜜南瓜汉堡。


















蜂蜜南瓜汉堡 

南瓜面包材料: 
配方取自揾到食 

高筋面粉  350g
低筋面粉  50g
南瓜泥  120g
蜂蜜  30g
牛奶  200g 
细砂糖  20g
速发酵母  6g 
油  30g

白芝麻  少许


做法 :

1. 所有材料混合(外),搅拌至光滑状
2. 加入奶油继续搅拌,搅拌至扩展阶段
 
3. 进行初步发酵至双倍大。
4. 面团排气后,分割成60g一份的小面团,滚圆,表层粘上白芝麻
5. 排放在抹油的烤盘上,进行第二次发酵大约45分钟或双倍大。
6. 放入预热170°C烤箱烤15-20分钟或表面呈金黄即可。
7. 将面包打横切开涂上一层奶油,面包切面向下放入平底锅里, 煎至稍微上色, 即可离火。
5. 面包放上生菜, 芝士片,肉饼, 番茄片,黄瓜片,挤上辣椒酱,番茄酱和美乃滋,再盖上另一半面包即可。



汉堡馅料 :

煎肉饼,芝士片,煎鸡蛋,番茄,黄瓜,生菜,辣椒酱,番茄酱,美乃滋




Honey & Pumpkin Burger 

Ingredients:

350g bread flour
50g  pain flour
120g mashed pumpkin
30g honey
200g milk
20g castor sugar
6g instant yeast
30g butter

some white sesame


Method :

1. Mix all the ingredient (except butter) until smooth dough.
2. Add butter continue to knead until smooth and elastic dough.
3. Proof the dough until it double in size.
4. Press down the dough to release the trapped air. Divide 60g each dough into equal small portion.
5. Shape it and
sprinkle with white sesame on top,place in the loaf tin and final proofing for about 45mins.
6. Bake in a preheated oven of 170 degrees C for 15-20 mins.
7. 
Slice each bun in half and spread some butter on both sideplace cut-side down and grill until light brown
set aside.
5.  Serve with burger,lettuce,tomatoes slice,cucumber and cheddar cheese.

蜂蜜乳酪蛋糕 Honey Cheesecake


















蜂蜜乳酪蛋糕
 
材料 : 8寸脱底蛋糕模

牛奶  100克
奶油乳酪  200克
无盐奶油  60克
蜂蜜  60克
蛋黃  4个 
低筋面粉  40克
玉米粉  20克

蛋白  4个
细砂糖  100克


可可粉  少许
黑可可粉  少许 



做法 :

1. 奶油乳酪切小块,加入牛奶隔水加热,搅拌至无颗粒状。
2. 离火把无盐奶油加入搅拌均勻。
3. 接着加入蜂蜜,蛋黄混合均匀。
4. 加入过筛的粉类,搅拌至无颗粒状。
5. 蛋白打至粗泡,分次加入细砂糖,打至湿性发泡。
6. 取1/3打发的蛋白霜,加入乳酪面糊中,用打蛋器由底往上翻拌均匀。

7. 倒入剩余的2/3蛋白糊中,以刮刀切拌均匀。
8. 将面糊倒入模具里,抹平表面轻顿数下。
9. 分別舀1大匙的蛋糕糊在两个碗中,再加入可可粉,调匀成深浅可可蛋糕糊,裝入挤花袋中。
9. 在表面画上浅色花紋,再画深色。
10. 水浴法,以180度,烤10-15分钟烤上色,再降溫上下火120度,烤50分钟后即可出炉待涼,放入冰箱冷藏2-3小時后即可享用。 (时间与温度方面可依自家的烤箱而做调整)  



Honey Cheesecake

Ingredients 8” round pan with removable base

100g milk
200g cream cheese 
60g unsalted butter
60g honey
4 egg yolks
40g cake flour 
20g corn flour

4 egg whites
100g caster sugar


cocoa powder
dark cocoa powder 



Method  

1. Cut the cream cheese into chunksadd in milkdouble boil with low heat. 
2. Add in unsalted butter mix until smooth.
3. Add in honey and egg yolks mix until thoroughly combined.
4. Fold in sifted flour and mix until well blended.  
5. Beat egg white till frothy and add in the sugar, in 3 batches. 
Beating till shiny peaks. 
6. Add 1/3 egg white meringue into egg yolk batter and fold well.  
7. Pour the batter back to the 2/3 egg  white meringue and fold into a smooth batter.
8. Pour the batter into the 8" round cake mould and level surface of batter, tap pan on table a few times to remove additional bubbles.
9. Scoop 1 tbsp batter into each 2 small bowls,add in the cocoa powder to mix into two shades of browns. Transfer the brown mixture into piping bag.
10. Draw out the leopard pattern.
11. Using water bath method,180 degrees for 10-15 mins,then 120 degrees,celcius top and bottom heat for 50 mins. Refrigerate for about 2-3 hours. Cut into slices and serve.

干捞云吞面 Wonton Noodles

























干捞云吞面

材料:(2人份) 

云吞面  300克
菜心   100克 (洗净)
江鱼仔上汤 / 鸡汤  1公升
青葱粒  适量 


面酱汁: 依个人口味调整份量

麻油  1大匙
蚝油  1/2
黑酱油   1大匙
生抽   3大匙
叉烧酱汁  3大匙
胡椒粉  1/2茶匙
盐   1/2茶匙 或 适量 


云吞 :

猪绞肉  150克
鲜虾肉  150克
胡椒粉  1茶匙
生抽  1/2大匙
粟粉  1茶匙
盐  1/4茶匙
云吞皮 适量


做法 :
1. 鲜虾洗净去肠泥,切2段。
2. 将猪肉碎放入大碗里,加入调味料腌制。
3. 取一张云吞皮,放入虾和猪肉馅料,对折包好,重复包完馅料。
4. 把包好的云吞分成2份,一份油炸另一份烫熟。
5. 烧热适量油,放入一份包好的云吞,炸至呈金黄色即可捞起沥干油份,备用。
6. 煮滚一锅水,先放入菜心烫熟,捞起,接着放入另一份的云吞,煮至云吞浮上水面,捞起备用。
7. 把云吞面弄散,放入热水的锅里煮熟,捞起用清水冲洗一遍(过冷河),沥干。 
8. 把煮熟的云吞面,加入酱汁拌均匀。
9. 将捞好的面摆在碟子里,淋上少许上汤,然后把云吞、烫熟的菜心放在云吞面上,撒上葱花即可。



Wonton Noodles

Ingredients:(Serves 2)

300g wonton noodles
100g choy sum,washed
1 liter anchovy stock / chicken stock
spring onion, chopped 


Noodle Sauce:  

1 tbsp sesame oil
1/2 tbsp oyster sauce
1 tbsp dark soy sauce
3 tbsp light soy sauce 
3 tbsp chinese barbecue sauce
1/2 tsp pepper 
1/2 tsp salt


Wanton :

150g minced pork
150g shelled prawn, deveined
1 tsp pepper
1/2 tbsp light soy sauce
1 tsp corn flour
1/4 tsp salt
wanton wrappers


Method :

1. Wash the prawn,deveined and cut each prawns into 2 sections.
2. In a large bowl,marinate the pork and set aside.
3. Place prawn and minced pork fillings in the centre of one wonton skin and wrapped up. Repeat with the rest of the filling.
4. Divide into 2 portions,deep fried and boiled.
5. Heat up oil for deep frying,place 1 portion of wontons into the hot oil and deep fry until golden brown on both sides. Dish and drain.
6. Bring a pot of water to the boil,blanch the choy sum till cooked,drain and set aside. Then add in another portion of wontons,stir and cook until appear floating onto the surface.
7. Loosen wonton noodle,put into the boiling water,when the noodle is cooked,drain and rinse it with running tap water for few seconds. 
8. Place the cooked noodles into the bowl,add in the ingredients of the sauce and toss to mix evenly.
9. Transfer the noodles to a plate,pour some of chicken stock. Top the noodle with wontons and blanched choy sum,garnish lightly with some chopped spring onions.

烤番薯年糕球 Baked Sweet Potato Mochi with Nian Gao






看到冰箱里差点被遗忘的年糕,选了这款不油腻,烘烤式的番薯年糕球。
做法简单也很不错吃










 



烤番薯年糕球

材料 : (约15粒)

番薯  160克
粘米粉  30克
糯米粉  45克
糖  20~40克(喜欢少甜的可以减少份量)
清水  6汤匙   
盐  少许
年糕  适量(切小块)
白芝麻 少许
玉米油 


做法 :

1. 番薯蒸好,压成泥,过筛。
2. 加入粉,清水,糖和盐。搅拌成团。 
3. 分割成15粒小团,包入年糕,手沾一些油以及白芝麻,搓圆。
4. 把年糕球排放在涂了层薄油的烤盘。
5. 预热烤箱,烤170度, 20-25 分钟。 


备注: 番薯的湿度都不同的,水的份量需自己拿捏。




Baked Sweet Potato Mochi with Nian Gao

Ingredients : (Yield 15 Mochi)

160g sweet potato (steamed, mashed and sieved)
30g rice flour
45g glutinous rice flour
20~40g castor sugar (can be reduced if you like it less sweet)
6 tbsp water    
pinch of salt
some nian gao, cut into small cubes 
Some sesame seeds
corn oil
 

Method :

1. Prepare the sweet potato puree.
2. Stir in flour,water,sugar and salt. Mix to form a pliable dough. 
3. Divide dough into 15 balls. Wrap in nian gao filling,grease your hands and roll into ball with sesame seeds.  
4. Place on a lightly greased baking tray. Repeat for the rest.
5. Bake in a preheated oven 170'C for 20-25 minutes or until fully cooked. You will see the nian gao starts bubbling out when it's ready. Enjoy!


Note: 
The amount of water used is depends on the moisture of the sweet potatoes. Do adjust accordingly.
