慢煎糕 Apam Balik(Ban Jian Kuih)





 













慢煎糕

面糊材料 :

面粉  170克
粘米粉  100克
玉米粉  30克
发粉  2茶匙
苏打粉  1/2茶匙
细砂糖  100克
盐  1/2茶匙
鸡蛋  2个
椰浆 / 牛奶 250克 

馅料  

花生碎,罐装玉米,糖,香蕉 (切片),牛油 


 

1. 所有粉类过筛,加入所有材料混合均匀。静置30分钟,备用。
2. 烧热平底不粘锅,舀入适量的面糊,洒上少许糖,加盖,小火煎至表面出现小洞洞。
3. 撒上花生碎、玉米酱、香蕉片和少许牛油。
4. 加盖再继续煎至饼皮边缘呈金黄色,对折,表面再刷上一层薄薄的牛油即可。 



Apam BalikBan Jian Kuih 

Ingredients 

170g plain flour
100g rice flour
30g corn flour
2tsp baking powder
1/2tsp baking soda
100g castor sugar
1/2tsp salt
2 eggs
250g coconut milk / milk 


Filling  

grounded peanutcream sweet corn,sugar,banana(sliced),butter 


Method  

1. Sieve all flourmix with all batter ingredientsrest for 30 minutes. 
2. Heat up a non-stick pan,pour in enough batter,sprinkle some sugar,cover and cook until the surface appear tiny holes. 
3. Sprinkle ground peanutcreamy sweet cornsliced banana and butter. 
4. Cover and cook until the corner of pancake is golden brown. Fold into half and brush with some butter. Serve hot.

蒸素糯米饭 Vegetarian Steamed Glutinous Rice


















蒸素糯米饭

材料 : 8人份

糯米  500克(洗净,浸泡6小时,沥干)
香菇  10朵(浸软,切丝)
素羊肉  80
素香酥鸡  80
素腌鸡  100

清水  适量

烘香花生碎  适量(撒面)


调味料: (份量依个人口味调整)

麻油,生抽,胡椒粉,五香粉,黑酱油,盐,香菇粉



做法

1. 烧热油,将素羊肉、素香酥鸡和素腌鸡加入适量的生抽和麻油炒香,盛起备用。
2.
烧热适量油,爆香香菇丝,加入糯米,下调味料,翻炒均匀。试味, 盛起。 

3. 将糯米,素料和适量的清水倒入蒸盘,放入蒸锅以大火蒸约60分钟至糯米熟透即可。


注:
1. 蒸到一半时,用汤匙搅拌松散糯米饭,若太干可再洒入清水。  
2. 清水的份量分次加入以避免糯米饭太软。




Vegetarian Steamed Glutinous Rice

Ingredients : (serves 8)

500g glutinous ricewashedsoaked 6 hoursdrained
10 shitake mushroomssoaked and shredded
80g vegetarian mutton meat
80g vegetarian soy nugget
100g vegetarian chicken meat

water

some ground toasted peanuts for garnishing


Seasoning

sesame oil
light soy saucepepper powderfive spice powderdark soy saucesaltmushroom powder



Method

1. Heat up oilstir fry the vegetarian mutton meatvegetarian soy nugget and vegetarian chicken meat with light soy sauce and sesame oil until aromaticset aside.
2.  Heat up oil, saute the mushrooms until fragrant
add in the soaked glutinous riceadd seasoning and stir welltaste and dish up. 

3. Transfer to the steaming tray and gradually add in watersteam with high heat for 60 minutes until the rice is well cooked.
4. Sprinkle ground toasted peanuts on top. Serve.


Noted
1. Use spoon to fluff up the rice during half way steaming, sprinkle water if too dry.
2. Add water in a few additions.

牛油果可可相思蛋糕 Avocado Cocoa Ogura Cake























牛油果可可相思蛋糕
7"方形模 

牛油果面糊 

材料A : 
蛋黄  50克
全蛋 (打散)  35克
粟米油  25克
盐  1/8茶匙 

材料B : 
特幼面粉  55克
牛油果泥  95克 (牛油果1颗加牛奶以果汁机搅打成泥) 


做法: 

1. 先混合(A),用打蛋器搅拌均匀。
2. 加入B)再搅拌拌匀。 


可可面糊 

材料 : 
可可粉  1汤匙 加 热水10克 (待凉备用)
粟米油  25克
牛奶  30克
盐  1/8茶匙
蛋黃  50克
全蛋 (打散)  35克
特幼面粉  35克 


做法 : 

1. 粟米油+牛奶+可可酱+盐+蛋黃+全蛋打至起小泡。
2. 加入特幼面粉再搅拌拌匀。 


蛋白霜 

材料 : 
蛋白  200克
细糖  65克 


做法 : 

1. 蛋白用搅拌机搅打至起泡,分次加入幼糖,打至尾端挺立。
2. 蛋白霜平均分成2份,分别加入牛油果糊以及可可面糊里,拌匀。
3. 将两色面糊倒入模具,轻敲出气泡。 
4. 预热烤箱,蒸烘法130度烘40分钟,然后转150度烘40分钟即可。
5. 出炉后,倒扣待凉。 



Avocado Cocoa Ogura Cake
7 inch square mould 

Avocado paste 

Ingredients A : 
50g egg yolk 
35g whole egg
25g corn oil
1/8 tsp salt 

Ingredients B : 
55g cake flour / super fine flour
95g mashed avocado ( Blend 1 avocado with milk ) 


Method 

1. Place all ingredients (A) in a mixing bowl and whisk to incorporate. 
2. Add in ingredients (B) and mix well. 


Cocoa paste 

Ingredients : 
1tbsp cocoa powder add 10g hot water (mix well)
25g corn oil
30g milk
1/8tsp salt
50g egg yolk
35g whole egg
35g cake flour / super fine flour 


Method : 

1. Corn oil+milk+cocoa paste+salt+egg yolk+whole egg beat together until frothy.
2. Sift in super fine flour and mix well. 


Meringue 

Ingredients : 
200g egg white
65g castor sugar 


Method : 

1. Beat egg white until frothy,gradually add in sugar in 3 batches and beat until stiff peaks.  
2. Divide the meringue into 2 equal portions,mix in the avocado paste and cocoa paste into each portion according,mix well with a spatula.
3. Pour the two types of batter into baking pan,lightly tap on table to remove big bubbles.
4. Steam-bake in preheated oven at 130C for 40 minutes,then 150C for 40 minutes.
5. Remove from oven,invert cake onto table until completely cooled.

柠檬乳酪蛋糕 Lemon Cheesecake

柠檬乳酪蛋糕 

巧克力蛋糕体材料: 6寸脱底圆模 

蛋黄  2个 
玉米油  25克 
牛奶  25克


低筋面粉  50克
无糖巧克力粉  15克 + 热水  50克搅拌成巧克力酱


蛋白  2个
细砂糖  30克


做法:

1. 蛋黄加玉米油、牛奶搅拌均匀。

2. 筛入低粉,加入巧克力酱搅拌成均匀的蛋黄面糊。
3. 蛋白分次加入细砂糖打发成尾端挺立的蛋白霜。
4. 将蛋白霜分3次拌入蛋黄面糊里,搅拌均匀。
5. 将面糊倒入模子里,放入预热后的烤箱,150烘烤大约40分钟。
6. 蛋糕烘好后,立刻取出烤箱倒扣,待凉后脱模切片备用。



乳酪蛋糕层材料 :

奶油乳酪  250克
细砂糖  80克
蛋 
3粒

原味优格  135毫升
柠檬酱  70克
低粉  1汤匙(过筛)
 


柠檬酱食谱这里


做法:


1. 在烤盘周边刷上奶油,取一片巧克力蛋糕放
在模型底部
2. 奶油乳酪在室温软化后,加入细糖,用搅拌机打至松发
3. 把蛋逐粒加入,并打发至光滑状。
4. 加入
优格,继续拌打成光滑的乳酪糊。
5. 转去低速,把低粉及香精加入拌匀。
6. 将柠檬酱倒入乳酪面糊里,用搅拌器拌匀。
7. 倒入
巧克力蛋糕上,放入预热烤炉,以水浴法,用160度烤约60 -70分钟。
8. 取出冷却,淋上柠檬醤,再放入冰箱3-4小时至定型才脱模。



 




Lemon Cheesecake 

Cake base ingredients : 
6” round pan with removable base


2 egg yolks
25g corn oil
25g milk
50g cake flour 

cocoa powder 15g + hot water 50g mix well
 

2 egg whites
30g castor sugar 


Method :

1. Combine egg yolks,corn oil and milk.
2. Sift in cake flour,add in chocolate paste and mix well,set aside.
3. Beat egg whites until frothy. Gradually add in castor sugar, beating until stiff peaks form.
4. Add 1/3 egg white into egg yolk batter and mix well,add the remaining meringue until blended.
5. Pour the batter into cake pan,bake in preheated oven at 150C for 40 minutes or until cooked.
6. Remove from oven,leave to cool and cut into layers. 





Cheese Cake Layer Ingredients
Recipe adapted from eileenの记事本 

250g cream cheese
80g castor sugar
3 eggs
135ml plain yogurt
70g lemon curd
1tbsp cake flour(sifted)

Method:


1.
Brush the inside of cake pan with butter,place 1 slice of chocolate cake.
2.
Beat the cream cheese and sugar until smooth.
3.
Add in eggs, one at a time, until creamy. 

4. Add in yogurt and mix until incorporated. 
5.
Turn the mixer to low,add in cake flour and mix well.
6. Add in lemon curd,
whisk until blended. 

7. Pour the cream cheese mixture onto the cake base and spread evenly. 
8. Bake in preheated oven for 160C for 60-70 mins until cooked. 
9. Remove the pan from the oven and let it cool aside. 
10. Pour lemon curd over the cake, chill in the fridge for 3-4 hours.

柠檬酱 Lemon Curd

















柠檬酱

材料: 


蛋黄  3个 
细砂糖  60克
柠檬  1粒(取汁)
柠檬屑  1个
牛油  80克 


做法:

1. 蛋黄加细砂糖搅拌
均匀,将柠檬汁及柠檬屑加入
2. 以隔水法,把做法(1)用搅拌器搅拌至浓稠状(约7至10分钟)。
3. 离火,
加入牛油搅拌至牛油完全溶化
4. 待冷,把柠檬酱装入罐子里,可放入冰箱保存







Lemon Curd

Ingredients :

3 egg yolks
60g castor sugar 
1 lemon,extract juice
1 lemon,finely grate the rind
80g  butter 


Method: 

1. Combine egg yolks with sugar,add in lemon juice and lemon rind.
2. Use double-boiler method cook and stir until mixture thickens,take about 7-10mins.
3. Remove from heat,add in butter and stir continuously until butter dissolved. 

4. Pour the lemon mixture into a clean container and cover it.

韭菜面粉糕 Chinese Chive Pancakes






小时候爱吃煎面粉糕,由其是加入笕菜的。
长大了却发现韭菜煎面粉糕,咸香也是很美味的。


















韭菜面粉糕

材料:

韭菜  100克(洗净,切粒)
虾米  30克 (洗净,剁碎)  面粉  150克
木薯粉  20克
鸡蛋  1个
清水  200-250克 (依面糊的浓稠度调整)

盐,胡椒粉  各适量
 

做法:

1. 锅中烧热油,爆香虾米,捞起。
2. 将所有材料混合成均匀的韭菜面糊。
3. ,加入少许油,舀入适量的面糊,煎至两面呈金黄色即可。



Chinese Chive Pancakes

Ingredients:

100g chinese chive,rinsed and diced
30g dried shrimps,rinsed and chopped
150g plain flour
20g tapioca flour
1 egg 
200-250g water

salt,pepper powder to taste
 

Method:

1. Heat up oil,stir-fry dried shrimps until fragrant.
2. Mix all the ingredients in a mixing bowl.
3. Heat a little oil in a frying pan,scoop in a ladle of batter,flip over the pancake until golden brown.
