奧利奧曲奇 Oreo Cookies






年饼之十一,第一次加入奧利奧做成饼干,
也是蛮香的。
















奧利奧曲奇

材料 :

牛油  150克 (软化)
细砂糖  80克
蛋  1个
普通面粉  200克
发粉  1/4小匙
奧利奧饼干  60克 (压碎)


做法 :

1. 将牛油和细砂糖搅拌松软,加入鸡蛋,拌匀。
2. 筛入面粉、发粉和奧利奧饼干屑,拌匀成团。
3. 把面团分割小等份,搓圆,放入烤盘。
4. 放入预热烤箱180°C,烤15分钟至熟。



Oreo Cookies

Ingredients :

150g butter (softedned)
80g caster sugar
1 egg
200g plain flour
1/4 tsp baking powder
60g oreo biscuits (crusted)


Method :

1. Beat butter and sugar until creamy. Stir in egg,beat until well blended.
2. Fold in sifted flour,baking powder and biscuit crust,mix until forms dough.
3. Roll the dough into ball shapes,arrange into baking tray.
4. Bake in preheated oven at 180°C for 15 minutes.

芝士杏仁饼 Cheese Almond Cookies







年饼之十~芝士杏仁饼,每年的年饼系列也是少不了杏仁饼,
今年换成了加入芝士粉,挺香的。















芝士杏仁饼

材料 :

牛油  100克 
糖粉  40克
蛋黄  1个 
芝士粉  50克
低筋面粉  120克
发粉  1/4茶匙

表层 : 蛋黄  1个,杏仁碎  少许


做法 :

1. 牛油加入糖粉一起搅拌至发白。
2. 蛋黄分2次加入拌匀。 
3. 加入芝士粉,昏合均匀。
4. 筛入面粉,拌匀成团。
5. 把面团擀平,印出形状
6. 排放在铺了烤纸的烤盘上。
7. 表层扫上一层蛋黄液,撒上杏仁碎。
8. 放入预热170烤箱,烘烤15-18分钟至金黄色。



Cheese Almond Cookies
 
Ingredients :

100g butter
40g icing sugar
1 egg yolk
50g parmesan cheese powder
120g plain flour

1/4tsp baking powder

1 yolk for glazing, some almond nibs for deco

 
Method :

1. Beat butter with icing sugar until light and fluffy. 

2. Add in egg yolk in 2 batches and mix well.
3. Add in parmesan cheese powder. Mix well.
4. Fold in sifted flour, mix mixtures to a soft dough.
5. Roll out the dough and cut into desired shapes with cookie cutter.
6. Place onto baking tray with baking paper.

7. Brush with beaten egg, sprinkle with some almond nibs.
8. Bake in preheated oven at 170C for 15-18 minutes or until light golden brown.

蓝莓酥 Blueberry Tarts




年饼之九~蓝莓酥,今年的年饼系列依然是少不蓝莓酥,
依然是用回配方。 










蓝莓酥

材料 :


牛油  180
糖粉  30

面粉  150

粟米粉  100

奶粉  50


内馅 : 蓝莓馅 (每份20克)


做法 :
 


1. 牛油加糖粉搅拌均匀,加入过筛的粉类拌成团。
2. 将面团分成每份30克,包入一份蓝莓馅,搓圆。
3. 放入模型里印出形状,排放在铺了烤纸的烤盘上。
4. 放入预热烤箱160度,烘烤25分钟或至表面金黄色。








Blueberry Tarts

Ingredients: 

180g butter
30g icing sugar
150g plain flour / all purpose flour 
100g corn flour
50g milk powder

Blueberry filling (20g each) 


Method :

1. Mixed butter and icing sugar till combine,fold in the sifted flour mix till become a soft dough.
2. Roll dough into ball 30g each,wrap in the blueberry filling.
3. Place dough inside the mould,flatten dough to conform to shape of mould. 
4. Remove blueberry tarts from the mould and arrange on the baking tray line with baking sheet.  
5. Bake in preheated oven at 160C for 25mins or till golden brown.

咸蛋黄酥饼 Salted Egg Yolk Cookies







年饼之八~咸蛋黄酥饼,尝试过用咸蛋黄做的饼干后,
真的是爱上了。。









咸蛋黄酥饼

材料 :
 
奶油  85克
细砂糖  40克
咸蛋黄  2个 (蒸熟,压烂)
面粉  125克
玉米粉  10克
发粉  1/8茶匙
 

蛋黄  1个 抹面用
白芝麻 洒在饼干上面 



做法 :
 
1. 把牛油和细砂糖搅拌均匀,打发至颜色变浅。
2. 筛入面粉,玉米粉和发粉,用刮刀拌匀。
3. 加入咸蛋黄,混合成团。
4. 把面团放入冰箱冷藏30分钟取出。
5. 把面团分割小等份,搓圆,放入烤盘,刷上蛋黄液再撒上芝麻。
6. 放入预热烤箱170°C,烤15分钟或金黄色。 



 


Salted Egg Yolk Cookies

Ingredients :
 
85g butter, softened at room temperature
40g caster sugar
2 cooked salted egg yolks, mashed
125g all purpose flour
10g corn flour
1/8 tsp baking powder

 
1 egg yolk, lightly beaten to glaze
white sesame seeds to sprinkle




Method : 

1. Beat butter and sugar until light and fluffy.
2. Sift flour, corn flour and baking powder into the butter mixture and use a spatula to mix until the flour mixture is totally absorbed into the butter mixture. 
3. Stir in the mashed salted egg yolks and gather the crumbs to form a soft pliable dough. 

4. Wrap dough in cling film and allow it to rest in the fridge for at least 30 mins.
5. Roll the dough into ball shapes,arrange into baking tray,brush with egg yolk and sprinkle sesame seeds on them.

6. Bake in preheated oven at 170°C for about 15 minutes or until golden brown.

黄梨酥 Pineapple Tarts






年饼之七~入口即化的黄梨酥,
每年家里的年饼都是少不了它。













黄梨酥

材料: 
 
牛油  350克
罐装炼乳  100克
面粉  510克
蛋黄  2个
 

黄梨馅  约700克
 
 
做法 :
 
1. 把牛油和炼乳打发。
2. 鸡蛋一粒接一粒加入,充分搅拌均匀。
3. 筛入面粉,搅拌成一个不粘手的面团。
4. 把黄梨馅搓圆(每颗8克), 面团分成小等份(每个10克)。
5. 面团压扁包入馅料搓圆。
6. 放入预热烤箱170度,烤20-25分钟或至金黄色。 



Pineapple Tarts

Ingredients :

 
350g butter
100g condensed milk
510g plain flour / all purpose flour
2 egg yolks

700g pineapple filling (homemade or store-bought)

 
Method :

1. Cream butter and condensed milk till light. 
2. Add in egg yolk one at a time, and beat until combine. 
3. Mix in flour, mix till become a soft and not sticky dough.
4. Roll pineapple filling into ball (8g each) and roll dough into ball (10g each).
5. Flatten a piece of dough and place a piece of the roll pineapple filling in the middle. Bring the edges of the dough together and press lightly to seal. Roll it in between your palms to shape it into a roll.
6. Bake in preheated oven at 170C for 20-25mins or till golden brown.

榛果巧克力粒曲奇 Hazelnut Chocolate Chip Cookies






年饼之六~榛果巧克力粒曲奇,
加入了小朋友喜爱的巧克力粒,味道蛮搭的。

















榛仁巧克力粒曲奇

材料 :

牛油  120克

糖粉  50克
面粉  150克
榛果粉  50克
巧克力粒  50克 




做法 :

1.将牛油和糖粉打发变白。
2. 加入过筛的面粉和榛果粉拌成面团,最后加入巧克力粒拌匀。
3.
将面团分成小圆球排放在烤盘上
4.
放入预热烤箱,以170度烤15-20分钟或至熟。




Hazelnut Chocolate Chip Cookies

Ingredients :

120g butter
50g icing sugar
150g plain flour
50g ground hazelnut
50g chocolate chips




Method :

1. Cream the butter and icing sugar until light and fluffy.
2. Sift in the plain flour and ground hazelnutmix until forms dough,then mix in the chocolate chips.
3.
Roll the dough into ball shapes,arrange into baking tray.

4.Bake in preheated oven at 170°C for about 15-20 minutes or until cooked.

杏仁脆片 Almond Florentines







第五款是会让人吃得停不了口的杏仁脆片,
去年来不及做,今年当然是非做不可了。












杏仁脆片

材料 : 

杏仁脆饼预拌粉  100克
杏仁片  200克


做法 : 

1. 把脆饼预拌粉和杏仁片混合均匀。
2. 将混合物均匀地铺在铺了不沾油纸上的烤盘。
3. 放入预热烤箱150度,烤约10分钟或至金黄色。
4. 取出趁热用刀子切割成小片,待凉后放入密封罐子。




Almond Florentines

Ingredients :

100g florentine premix
200g almond flakes


Method :

1. Combine florentine premix with almond flakes. 
2. Spread almond mixture evenly onto a baking tray lined with greseproof paper.
3. Bake in preheat oven at 150'C for 10 minutes or until golden brown.
4. Remove,immediately use cutter to cut out small squares,leave to cool and store in an airtight container.

咖啡曲奇 Coffee Cookies






第四款年饼,也是一款很香的曲奇,
喜欢咖啡的会很爱。











咖啡曲奇

材料: 
 
牛油  250克
细砂糖  120克
面粉  250克
粘米粉  120克
即溶咖啡粉  4大匙
 
 
做法:
 
1. 将牛油和细砂糖搅拌成乳白色。
2. 加入过筛的面粉,粘米粉,咖啡粉拌匀成团。
3. 将面团分成小圆球排放在烤盘上,然后放上巧克力粒作装饰。
4. 放入预热烤箱,以170度烤20分钟或至熟。



Coffee Cookies

Ingredients : 

250g butter
120g caster sugar
250g plain flour
120g rice flour
4tbsp instant coffee powder


Method :

1. Cream the butter and sugar until light and fluffy.
2. Sift in the plain flour,rice flour,coffee powder,mix until forms dough.
3. Roll the dough into ball shapes,garnish with chocolate chips.
4. Bake in preheated oven at 170°C for about 20 minutes or until cooked.

花生腰果酥饼 Peanut & Cashew Nut Cookies






第三款年饼,花生再加上腰果,是又香又酥。















花生腰果酥饼

材料:

花生米  100克 (炒香)
面粉  100克
细砂糖  45克
盐  1/4小匙
花生油  50-60克
腰果  20粒

表面装饰:蛋黄液少许


做法:

1. 将炒香花生米放入搅拌机打成花生粉。
2. 面粉过筛后,加入糖、盐、花生粉。
3. 拌匀后再加入花生油,揉成团。
4. 将面团分成小圆球排放在烤盘上。
5. 放上腰果,刷上蛋黄液。
6. 放入预热烤箱170度,中层烤20分钟左右。



Peanut & Cashew Nut Cookies

Ingredients :

100g peanuts (toasted)
100g flour
45g caster sugar
1/4tsp salt
50-60g peanut cooking oil
20 cashew nut

Greasing and topping:egg's yolk


Method:

1. Ground the peanuts until fine.
2. Combine with sifted flours,sugar and salt.
3. Add in peanut cooking oil,mix until forms dough.
4. Roll the dough into ball shapes,arrange into baking tray.
5. Decorate with a piece of cashew nut on top and brush with egg’s yolk.
6. Bake in preheated oven 170'C for 20 minutes.

牛油花饼 Butter Cookies






再来第二款,是每年都会做的牛油脆饼,
今年挤成较小的花形。












牛油花饼

材料:

牛油  100g
糖粉  25g
高筋面粉  75g
粘米粉  25g 


做法: 

1. 将牛油和糖粉充分搅拌成乳白色。
2. 筛入高筋面粉和粘米粉,搅拌均匀即可(不要过份搅拌,否则高筋面粉容易起筋性)。
3. 用挤花袋挤出形狀。
4. 预热烤箱160°C,烤25-35分钟(看自家的烤箱而定)或熟透。
5. 待凉后装罐即可。
 



Butter Cookies

Ingredients :


100g butter
25g icing sugar
75g high protein flour
25g rice flour 


Method : 

1. Cream the butter and icing sugar until light and fluffy. 
2. Sift in the high protein flour and rice flour,lightly mix to combine. (Don't over mix) 
3. Fill the dough into piping bag and pipe on lined baking tray. 
4. Bake in preheated oven at 160°C for about 25-35 minutes. 
5. Cool completely before storing in the airtight container.
