黑芝麻花型面包 Black Sesame Flower Shaped Bread

黑芝麻内馅

黑芝麻粉  200克
糖粉  120克
奶油  80克
 
所有材料混合均匀,备用。

娘惹豆酱马铃薯焖鸡 Ayam Pongteh






这道做法简单的豆酱马铃薯焖鸡,味道好又下饭。










娘惹豆酱马铃薯焖鸡

材料 :
 

鸡全腿  2个(切块)
香菇  6朵(泡软,切半)
马铃薯  2粒(切块)

清水 适量

小葱头  16粒(捣碎)
蒜头  5(捣碎)



调味料 : 

豆瓣酱  2汤匙
椰糖  1汤匙
黑酱油  少许
盐  适量


做法:
 
1. 热油锅,爆香小葱头和蒜头。
2. 加入豆瓣酱炒香,加入鸡肉、香菇和马铃薯拌炒。
3. 倒入清水(盖过材料),煮滚后盖上锅盖,小火焖煮
4. 下调味料,继续焖煮至至鸡肉和马铃薯熟透,酱汁浓稠即可。





Ayam Pongteh

Ingredients :
 
2 whole chicken legs (cut into pieces)
6 shitake mushrooms (soaked,cut into half)
2 potatoes (cut into pieces)
water
 
16 shallots (pounded)
5 garlic (pounded)
 
 
Seasoning:
 
2tbsp fermented bean paste
1tbsp palm sugar
Dark soy sauce
salt to taste
 
 
Method:
 
1. Heat oil,saute shallots and garlic until aromatic.
2. Add fermented bean paste and saute till fragrant. Add chicken,potatoes,mushrooms and stir fry.
3. Add water (cover the ingredients). Bring to boil,cover with lid and turn to low heat.
4. Add seasonings and simmer till chicken and potatoes becomes tender and

南瓜贝果 Pumpkin Bagel


















南瓜贝果

材料 : (6 个)

高筋面粉  300克
即溶酵母  3克
细砂糖  15克
盐  5克
南瓜泥  190克


烫贝果水 : 水 500克 + 糖 1大匙

表面 : 亞麻籽


做法 :

1. 将所有材料放入搅拌机,搅拌成团至光滑。
2. 滚圆,待发酵至双倍大。
3. 面团排气,分割成6份(各80克),休面10分钟。
4. 整形,排放到烤盘上,发酵30分钟。
5. 将烫贝果水煮沸,放入发酵后的贝果,两面各烫30秒,
6. 捞起沥干,排放到烤盘上,撒适量的亞麻籽在面团的表面上。
7. 放入预热烤箱,200C烤15-20分钟,至表面呈金黄色即可。




Pumpkin Bagel

Ingredients : (makes 6)
300g high protein flour 
3g instant yeast 
15g caster sugar 
5g salt 
190g mashed pumpkin

For the water bath : 500g water +1tbsp sugar

Topping : Flaxseed


Method :
1. Combine all dough ingredients in the mixer,knead till smooth dough. 
2. Round up the dough,leave to rise until double in size.
3. Punch down the dough to expel air,divide into 6 portions (80g each),rest for 10 minutes.
4. Shaping,place on a baking tray and leave to proof for 30 minutes.
5. Bring water and sugar to boil. Blanch the bagel into boiling water for 30 seconds each side. 
6. Dish and drain,place onto baking tray. Topped with flaxseed.
7. Bake at a preheated oven at 200C for about 15-20 minutes or until golden brown.

鲜奶馒头 Milk Mantou (Chinese Steamed Buns)






热腾腾的馒头配热辣辣的咖哩,滋味十足,最喜欢这样的吃法了。








鲜奶馒头

材料 : 8份 

牛奶  140 
即溶酵母  3

包粉  250克
细砂糖  20
粟米油  5



做法 : 

1. 先将牛奶和酵母搅拌融化。加入所有材料,搓揉成光滑面团,松弛5分钟。
2. 面团擀开成长方形,刷上清水,卷成圆柱状,再分割成等份,摆放在纸上。 
3. 将面团放入蒸内,盖上蒸盖,进行最后约30-45分钟。 
4. 大火蒸约15分钟熄火,不要立刻打开锅盖,锅盖打开个一个小缝,5分钟后才把锅盖打开。




鲜奶馒头

Ingredients : makes 8

140g milk 
3g instant yeast 

250g pao flour 
20g  castor sugar
5g corn oil


Method : 

1. Mix instant yeast with milk till dissolved. Add in all ingredients,knead into a smooth dough.
2. Roll out the dough into rectangle shape,brush some water,roll into dough like a swiss roll and cut into 8 pieces.
3. Place on steamerprove the dough for 30-45 minutes in the steamer. 
4. Steam at high heat for 15 minutesturn off fire, allow buns to sit inside for another 5 minutes before opening lid.

菠菜面 Spinach Noodles
















菠菜面
 
面团材料: 

中筋面粉  400克
菠菜汁  160克
盐  1/2小匙
油  1小匙


菠菜汁: 菠菜  200克 + 水100克


做法:

1. 用滚水将菠菜烫软,沥干切段,放入搅拌机加水搅打成菠菜汁。
2. 将所有材料揉成团,休面30分钟。
3. 分割成4-5份,撒些面粉,用擀面棍擀薄。
4. 放入压面机反复擀压数次至光滑,再切割成粗或细面条,撒上面粉以免面团黏粘。
5. 煮滚一锅热水,放入菠菜面条,煮至面条浮起。

Spinach Noodles

Dough ingredients :

400g plain flour
160g spinach puree
1/2tsp salt
1tsp oil


Spinach puree : 200g spinach + 100g water


Method :

1. Blanch spinach in boiling water to soften,drain and cut into sections. Blend the spinach with water until smooth.
2. Place all ingredients in a mixing bowl,knead until the dough is smooth. Let it rest for 30 minutes.
3. Divide into 4-5 portions,dust the surface with some flour,roll the dough with a rolling pin.
4. Use the pasta machine to roll the dough into flat piece. Repeat the process for several times. 
5. Transfer the flat dough to small strand cutter,sprinkle some flour to avoid sticking.
6. Boiled a pot of water,add in the spinach noodles until the the noodles float up.

奥利奥乳酪杯子蛋糕 Oreo Cheese Cupcakes

















奥利奥乳酪杯子蛋糕

材料 : 可做10-12个

奶油乳酪  40克
牛奶  60克
牛油  25克 
低筋面粉  65克
蛋黄  4个 
Oreo饼干碎  30g


蛋白  4个
细砂糖  80克
 
 
奥利奥乳酪 :
 
植物性鲜奶油  150克
奶油乳酪  120克
Oreo饼干


做法 :

1. 将奶油乳酪,牛奶和牛油隔水煮至溶化浓稠 
2. 筛入低筋面粉,混合均匀。加入蛋黄,搅拌均匀。
3. 蛋白打至粗泡,分次加入细砂糖打至湿性发泡。
4. 分次将蛋白霜拌入乳酪面糊里,加入饼干碎轻轻拌匀
5. 舀入蛋糕纸杯,以170度,烤20-25分钟至熟即可。
6. 待凉后挤上奶油,放上奥利奥饼,放入冰箱冷藏后,享用。



Oreo Cheese Cupcakes
 
Ingredients : Makes 10-12

40g cream cheese
60g milk
25g butter 
65g cake flour
4 egg yolks
30g oreo,crushed


4 egg whites
80g castor sugar


For the oreo cream :
 
150g whipping cream
120g cream cheese
oreo cookies


Method :

1. Double boil cream cheese,milk and butter until dissolves and thickens.
2. Fold in sifted flour,mix until smooth. Add in egg yolks and mix until well combined.
3. Whisk egg whites until frothygradually add in sugar,beat until stiff.
4. Add into the cheese mixture until well incorporated,fold in crushed oreo.
5. Scoop the batter into cupcake liners,bake in preheated oven at 170C for 20-25 minutes.
6. Pipe cream onto each cupcake and top with oreo cookies as deco.

烤香辣糯米饭 Pulut Panggang Rempah Udang






很喜欢这款糕点,烘烤后香蕉叶的香气加上咸香辣的馅料,
美味极了。。。










 







烤香辣糯米饭

馅料:

(A) 搅烂
辣椒  120克
蒜头  40克
小葱头  50克
香茅  100克
黄姜  50克 

(B)
虾米  150克(泡软,剁碎)
椰丝  400克


调味料 :

盐  2茶匙 或 适量
糖  2茶匙 或 适量


做法:

1. 烧热油,爆香(A),再加入(B)翻炒至香。
2. 加入适量的盐和糖调味,盛起。



糯米饭材料:

糯米  600克(洗净,浸4小时,沥干)
浓椰浆  150克
清水  200克
盐  2茶匙
班兰叶  数片(打结)
兰花  30朵 (加入3大匙热水浸泡出蓝色素)

香蕉叶 (洗净用热水烫软,擦干)
竹签


做法:

1. 糯米加入椰浆,清水和盐拌匀,倒入蒸盘,放入班兰叶,大火蒸45分钟至熟。
2. 取出1/3的糯米饭加入蓝色素拌匀,再把其余的白糯米饭加入随意拌匀成蓝白糯米饭
3. 把糯米饭平铺在香蕉叶上,中间铺上馅料,卷成长条形,两端用竹签封紧。
4. 将糯米卷排放在烤盘,放进预热烤箱180C烤大约10-15分钟,即可 烧热一个平底锅,抹上少许油,放入包好的糯米,两面煎至焦黄



Pulut Panggang

Filling:

(A) Pounded
120g chilli
40g garlic
50g shallots
100g lemongrass
50g tumeric

(B)
150g dried shrimps (soaked,chopped)
400g grated coconut


Seasoning :

2tsp salt

2tsp sugar


Method:

1. Heat oil,fry(A)until fragrant,add in(B)and stir fry till fragrant.
2. Add in seasoning and stir well,dish out.



Ingredients for glutinous rice:

600g glutinous rice(washed and soaked for 4 hours and drained)
150g thick coconut milk
200g water
2tsp salt
pandan leaves (knotted
30 buds fresh butterfly pea flowers (soaked in 3tbsp hot water)

banana leave (scalded in boiling water to soften,wiped dry)
toothpicks


Method:

1. Mix glutinous rice with coconut milk,water and salt,add pandan leaves and steam for 45 minutes or until cooked. 
2. Take 1/3 portion of glutinous rice to mix with blue coloring,then combine with the remaining of the white glutinous rice, mix to form glutinous rice with blue and white colour.
3. Place some cooked glutinous rice over the banana leaf,add filling at the centre of rice,roll up and secure ends with toothpicks.
4. Place wrapped glutinous rice on the baking pan,bake in preheated oven 180C for 10-15 minutes. OR heat up oil in a pan,put in wrapped glutinous rice and fry until brown.

娘惹胭脂鸡 Inche Kabin (Nyonya Fried Chicken)

 
 
 
 
 
 
 
 
 






 
 
 
 
娘惹胭脂鸡
 
材料
10只鸡翅膀,切半

腌料
红葱  6粒
香茅  3支 (取白色部份)
黄姜  3公分
鸡蛋  1粒
咖喱粉  2大匙
盐  2小匙
粟粉  3大匙
椰浆  50克
 
先将红葱,香茅和黄姜搅烂,再与其余的腌料混合, 备用。


装饰: 虾饼, 青葱粒, 红辣椒粒


做法
 
1. 将腌料和鸡翅膀拌匀,腌制隔夜或至少3-4小时以上。 
2. 热油锅,将腌好的鸡只放入热油里,炸至金黄色或熟,捞起,沥干油份。 
3. 配搭虾饼,撒上青葱粒,红辣椒粒一起享用。 



Nyonya Fried Chicken

Ingredients
10 chicken wings,cut into half

Marinade
6 shallots
3 stalks lemongrass,used bottom part
3 cm turmeric
1 egg
2 tbsp curry powder
2 tsp salt
3 tbsp cornstarch
50g coconut milk

Pound the shallots,lemongrass and turmeric,mix with other marinade,set aside.

For Garnishing : Prawn crackers,chopped red chili,spring onion


Method:
 
1. To marinate the chicken for overnight or at least 3-4 hours.
2. Deep-fry the chicken in hot oil until golden brown and cooked.  Dish up and drain.
3. Garnish with prawn crackers,chopped red chili and spring onion,serve.
