菠菜面 Spinach Noodles


中筋面粉  400克
菠菜汁  160克
盐  1/2小匙
油  1小匙

菠菜汁: 菠菜  200克 + 水100克


1. 用滚水将菠菜烫软,沥干切段,放入搅拌机加水搅打成菠菜汁。
2. 将所有材料揉成团,休面30分钟。
3. 分割成4-5份,撒些面粉,用擀面棍擀薄。
4. 放入压面机反复擀压数次至光滑,再切割成粗或细面条,撒上面粉以免面团黏粘。
5. 煮滚一锅热水,放入菠菜面条,煮至面条浮起。


Spinach Noodles

Dough ingredients :

400g plain flour
160g spinach puree
1/2tsp salt
1tsp oil

Spinach puree : 200g spinach + 100g water

Method :

1. Blanch spinach in boiling water to soften,drain and cut into sections. Blend the spinach with water until smooth.
2. Place all ingredients in a mixing bowl,knead until the dough is smooth. Let it rest for 30 minutes.
3. Divide into 4-5 portions,dust the surface with some flour,roll the dough with a rolling pin.
4. Use the pasta machine to roll the dough into flat piece. Repeat the process for several times. 
5. Transfer the flat dough to small strand cutter,sprinkle some flour to avoid sticking.
6. Boiled a pot of water,add in the spinach noodles until the the noodles float up.
