牛油果可可相思蛋糕 Avocado Cocoa Ogura Cake























牛油果可可相思蛋糕
7"方形模 

牛油果面糊 

材料A : 
蛋黄  50克
全蛋 (打散)  35克
粟米油  25克
盐  1/8茶匙 

材料B : 
特幼面粉  55克
牛油果泥  95克 (牛油果1颗加牛奶以果汁机搅打成泥) 


做法: 

1. 先混合(A),用打蛋器搅拌均匀。
2. 加入B)再搅拌拌匀。 


可可面糊 

材料 : 
可可粉  1汤匙 加 热水10克 (待凉备用)
粟米油  25克
牛奶  30克
盐  1/8茶匙
蛋黃  50克
全蛋 (打散)  35克
特幼面粉  35克 


做法 : 

1. 粟米油+牛奶+可可酱+盐+蛋黃+全蛋打至起小泡。
2. 加入特幼面粉再搅拌拌匀。 


蛋白霜 

材料 : 
蛋白  200克
细糖  65克 


做法 : 

1. 蛋白用搅拌机搅打至起泡,分次加入幼糖,打至尾端挺立。
2. 蛋白霜平均分成2份,分别加入牛油果糊以及可可面糊里,拌匀。
3. 将两色面糊倒入模具,轻敲出气泡。 
4. 预热烤箱,蒸烘法130度烘40分钟,然后转150度烘40分钟即可。
5. 出炉后,倒扣待凉。 



Avocado Cocoa Ogura Cake
7 inch square mould 

Avocado paste 

Ingredients A : 
50g egg yolk 
35g whole egg
25g corn oil
1/8 tsp salt 

Ingredients B : 
55g cake flour / super fine flour
95g mashed avocado ( Blend 1 avocado with milk ) 


Method 

1. Place all ingredients (A) in a mixing bowl and whisk to incorporate. 
2. Add in ingredients (B) and mix well. 


Cocoa paste 

Ingredients : 
1tbsp cocoa powder add 10g hot water (mix well)
25g corn oil
30g milk
1/8tsp salt
50g egg yolk
35g whole egg
35g cake flour / super fine flour 


Method : 

1. Corn oil+milk+cocoa paste+salt+egg yolk+whole egg beat together until frothy.
2. Sift in super fine flour and mix well. 


Meringue 

Ingredients : 
200g egg white
65g castor sugar 


Method : 

1. Beat egg white until frothy,gradually add in sugar in 3 batches and beat until stiff peaks.  
2. Divide the meringue into 2 equal portions,mix in the avocado paste and cocoa paste into each portion according,mix well with a spatula.
3. Pour the two types of batter into baking pan,lightly tap on table to remove big bubbles.
4. Steam-bake in preheated oven at 130C for 40 minutes,then 150C for 40 minutes.
5. Remove from oven,invert cake onto table until completely cooled.
