Viennese Chocolate Sables

做年饼,冰箱里收存最多是蛋白,找来了出自Pierre Herme的食谱,

食谱取自 : 茄子 / Kokken69


面粉  260g
可可粉  30g(请选用较好品质的)
牛油(含盐)  250g
糖粉  100g(过筛)
蛋白  3tbsp



1. 牛油温室软化,加入糖粉搅拌均匀。
2. 加入蛋白拌均,再加入过筛粉类。
3. 将面团放进进挤花袋,用星形挤花嘴,在油纸上面挤出W形状。
4. 烘烤180度10-12分钟。
