南乳烤鸡腿 Nam Yu Roast Chicken Drumsticks






喜欢简易方便又美味的料理, 
而烤鸡也就成了餐桌上的常客。



 












南乳烤鸡腿

鸡腿  6个
 


南乳  2块
南乳汁  2茶匙
酱油  1茶匙
麻油  1茶匙
蜂蜜  1汤匙 



做法 :

1. 用汤匙把南乳块弄碎和其它醃料混合一起。 
2. 鸡腿清洗干净抹干后,均匀的涂上醃料,醃至少一个小时以上或隔夜。
3. 把鸡腿放入预热200'C的烤箱,烤大概40-50分钟,间中拿出来把鸡腿翻面。

6 chicken drumsticks


For marinate
2 pieces nam yu
2 tsp nam yu liquid
1tsp light soy sauce
1 tsp sesame oil
1 tbsp honey 



Method :

1. Mash up the nam yu with the liquid and mix with the other ingredients for marinate.
2. Clean and pat dry the drumsticks,and coat well with the marinates,marinate for at least 1 hour or overnight. 

3. Roast the drumsticks in preheated oven at 200'C for 40-50 minutes,flip the drumstick in between to roast both sides evenly.

韭黄炒虾仁 Fried Yellow Chives with Shrimps



















韭黄炒虾仁

材料:
韭黄  200克
虾仁  150克
红辣椒  1条 (切丝) 
蒜茸  1汤匙

调味料 :  盐 适量



做法 :

1. 虾仁去壳,去肠泥,清洗干净。
2. 韭黄洗净切段。
3. 热油锅,爆香蒜茸,放入虾仁拌炒。
4. 加入韭黄和辣椒翻炒。 
5. 下适量的盐调味拌炒均匀即可盛起。 




Fried Yellow Chives with Shrimps

Ingredients :

200g yellow chives
150g prawns
1 red chilli,shredded
1 tbsp chopped garlic

salt as required


Method :
 
1. Shelled prawn, deveined and washed.
2. Yellow chives cut into sections.
3. Heat up oil,sauté chopped garlic till fragrant,add in prawns and stir well.
4. Add in yellow chives,red chilli and stir fry.
5. Add salt and stir-fry until well mixed. Dish up.

百香果香蕉豆奶隔夜燕麦 Overnight Oats with Passion Fruit & Banana





俗话说“一日之计在于晨” ,以健康早餐,迎接美好的一天。
















百香果香蕉豆奶隔夜燕麦

材料:

燕麦片  6tbsp (45g)
低糖豆奶  1+1/2杯
奇异籽  1tbsp
百香果  1个
香蕉  1条 (切片) 


做法:

1. 用一个干净的玻璃瓶,放入燕麦片奇异籽。
2. 之后慢慢加入奶直到近3/4满,轻轻搅拌把瓶底的燕麦片和奶拌均。 
3. 盖上盖,然后放进冰箱冷藏一夜。
4. 隔天当你要享用时,加香蕉片和百香果肉,以及蜂蜜调味,搅拌后就能享受一份健康又有营养的早餐了。 




Overnight Oats with Passion Fruit & Banana


Ingredients:

6tbsp (45g) rolled oats
1+1/2cup Soya milk (less sugar)
1tbsp chia seeds
1 passion fruit
1 banana (sliced) 


Method:

1. Using a clean sterilized glass jar, add rolled oats and chia seeds.
2. Pour in soya milk till almost 3/4 full, stir the mixture with a clean spoon to loosen the oats at the bottom of the jar.
3. Cover the jar and leave the mixture overnight in the fridge.
4. In the morning, before having your oats,add sliced
banana and
fresh passion fruit plus drizzle of honey (optional) to sweeten the taste.

芝麻沙拉酱 Sesame Salad Dressing


















芝麻沙拉酱

材料:

白芝麻粒  30克 - 50克 (预先炒香或烤香)
红萝卜  1/2个 或 1个 (切块)
洋葱  1/2个 (切块) 
蒜  1辩
细砂糖 或 黄砂糖  50克
太阳花油  200克
糙米醋  200克
盐  少许
 
做法: 将所有材料放入食物搅拌机搅拌即可。
 
 
注: 
1. 不同的油或醋的使用将会影响成果的味道。避免用味道过浓的橄榄油(extra virgin oil)。
2. 将做好的沙拉酱,密封干净的罐子,收进冰箱可耐1星期之久。 
 
 
 
Sesame Salad Dressing 
 
Ingredients : 
 
30g-50g white sesame seeds,stir-fried until fragrant 
½ or 1 carrot,chopped 
½ a onion,chopped 
1 clove garlic
50g caster sugar 
200g sunflower oil 
200g brown rice vinegar 
pinch of salt
 
 
Method : Blend all the ingredients in a stick blender,and you're done. 
 
 
Notes : 
1. The types of oil and vinegar used may change the taste of the dressing a little. Avoid extra virgin oil because its grassy smell may spoil the taste of the salad dressing. 
2. Salad dressing can be kept in a clean bottle/container for weeks in the fridge.

韭菜粿 Ku Chai Kueh (Steamed Chive Dumplings)







菜粿,无论是沙葛或韭菜内馅,
都是从小到大最喜爱的传统糕点。
 



















韭菜粿

粿皮:
 
粉  100克
木薯粉 100克 
盐  1/2茶匙
油  1汤匙
沸水  250~300克


馅料:

韭菜  250克 (切小段)
虾米  50克(碎)
蒜茸  2汤匙

调味料: 盐  适量 
 
 
做法
 
1. 热油锅,爆香蒜, 加入虾米炒香。
2. 加入韭菜拌炒,加适量调味,盛起备用。 
3. 先将澄面粉,木薯粉和盐混合,把沸水冲入粉中,快速搅拌成软团。
4. 加入油,揉成光滑面团。 
5. 面团分割成小团,擀成圆薄片,包入馅料。 
6. 将菜粿排放在涂了油的蒸盘上,大火蒸8-10分钟即可。 
7. 取出后,趁热上炸葱油,撒上炸香蒜和红辣椒即可享用。
 
 

Steamed Chive Dumplings (Ku Chai Kueh)

Ingredients:

100g wheat starch
100g tapioca flour

1/2 tsp salt
1 tbsp oil
250g-300g boiling water 



Filling:

250g chinese chives,diced
50g dried shrimps,chopped
2 tbsp chopped garlic

Seasoning : salt to taste
 

Method:

1. Heat up oil,sauté chopped garlic and dried shrimps till fragrant.
2. Add in chives,seasoning and stir-fry till fragrant. Dish out and set aside to cool.
3. Mix all flour and salt into a mixing bowl. Pour the boiling water into the flour. Stir well with a wooden spoon.
4. Add in oil and knead the dough till smooth.
5. Divide the dough into small portion. Using a rolling pin to flatten out the dough and wrap with fillings.
6.  Arrange dumplings on greased steaming tray,steam over hot boiling water for 8-10 minutes with  high heat. Dish out.
7. Brush the surface with some shallots oil,garnish with fried garlic and chopped red chili,serve.

夺命肉松芝士软面包(一次发酵法) Pork Floss Cheese Killer Soft Bread (Just Once Fermentation)





做了这夺命面包,现在是越来越喜欢一次发酵法的食谱。

 









夺命肉松芝士软面包
材料
高筋面粉  260克
即溶酵母  3克
蛋液  50克
鲜奶  100-130克
细糖  30克
  2克
奶油  30克

内馅 : 肉松
表层 : 美乃滋,芝士条
 

做法 :

1. 所有材料混合(外),搅拌至光滑状
2. 加入奶油继续搅拌,搅拌至扩展阶段
3. 面团揉好后,分割成60g一份的小面团,滚圆擀成圆面片
4. 包入肉松,收口捏紧。放入纸托,进行最后发酵至双倍大。
5. 挤上美乃滋,撒上芝士条。
6. 放入预热烤箱里以170度烘烤20-25分钟,面包表面上色后,盖上一张铝箔纸。 




Pork Floss Cheese Killer Soft Bread 
Ingredients :
260g bread flour
3g instant dry yeast
1 egg (50g)
100g-130g milk
30g sugar
2g salt 
30g butter

Filling : pork floss
Toppingmayonnaise,mozzarella cheese   

 

Method :

1. Mix all the ingredient (except butter) until smooth dough.
2. Add butter continue to knead until smooth and elastic dough.
3. Divide 60g each dough into equal small portion. 
4. Flatten dough and wrap in the pork floss and place it into baking cups.
5. Squeeze mayonnaise and sprinkle with mozzarella cheese onto top of bread
6Bake in preheated oven at 170 C for 20-25 minutes. (Cover bread surface with foil if it browns too quickly)
