柠檬乳酪蛋糕 Lemon Cheesecake

柠檬乳酪蛋糕 

巧克力蛋糕体材料: 6寸脱底圆模 

蛋黄  2个 
玉米油  25克 
牛奶  25克


低筋面粉  50克
无糖巧克力粉  15克 + 热水  50克搅拌成巧克力酱


蛋白  2个
细砂糖  30克


做法:

1. 蛋黄加玉米油、牛奶搅拌均匀。

2. 筛入低粉,加入巧克力酱搅拌成均匀的蛋黄面糊。
3. 蛋白分次加入细砂糖打发成尾端挺立的蛋白霜。
4. 将蛋白霜分3次拌入蛋黄面糊里,搅拌均匀。
5. 将面糊倒入模子里,放入预热后的烤箱,150烘烤大约40分钟。
6. 蛋糕烘好后,立刻取出烤箱倒扣,待凉后脱模切片备用。



乳酪蛋糕层材料 :

奶油乳酪  250克
细砂糖  80克
蛋 
3粒

原味优格  135毫升
柠檬酱  70克
低粉  1汤匙(过筛)
 


柠檬酱食谱这里


做法:


1. 在烤盘周边刷上奶油,取一片巧克力蛋糕放
在模型底部
2. 奶油乳酪在室温软化后,加入细糖,用搅拌机打至松发
3. 把蛋逐粒加入,并打发至光滑状。
4. 加入
优格,继续拌打成光滑的乳酪糊。
5. 转去低速,把低粉及香精加入拌匀。
6. 将柠檬酱倒入乳酪面糊里,用搅拌器拌匀。
7. 倒入
巧克力蛋糕上,放入预热烤炉,以水浴法,用160度烤约60 -70分钟。
8. 取出冷却,淋上柠檬醤,再放入冰箱3-4小时至定型才脱模。



 




Lemon Cheesecake 

Cake base ingredients : 
6” round pan with removable base


2 egg yolks
25g corn oil
25g milk
50g cake flour 

cocoa powder 15g + hot water 50g mix well
 

2 egg whites
30g castor sugar 


Method :

1. Combine egg yolks,corn oil and milk.
2. Sift in cake flour,add in chocolate paste and mix well,set aside.
3. Beat egg whites until frothy. Gradually add in castor sugar, beating until stiff peaks form.
4. Add 1/3 egg white into egg yolk batter and mix well,add the remaining meringue until blended.
5. Pour the batter into cake pan,bake in preheated oven at 150C for 40 minutes or until cooked.
6. Remove from oven,leave to cool and cut into layers. 





Cheese Cake Layer Ingredients
Recipe adapted from eileenの记事本 

250g cream cheese
80g castor sugar
3 eggs
135ml plain yogurt
70g lemon curd
1tbsp cake flour(sifted)

Method:


1.
Brush the inside of cake pan with butter,place 1 slice of chocolate cake.
2.
Beat the cream cheese and sugar until smooth.
3.
Add in eggs, one at a time, until creamy. 

4. Add in yogurt and mix until incorporated. 
5.
Turn the mixer to low,add in cake flour and mix well.
6. Add in lemon curd,
whisk until blended. 

7. Pour the cream cheese mixture onto the cake base and spread evenly. 
8. Bake in preheated oven for 160C for 60-70 mins until cooked. 
9. Remove the pan from the oven and let it cool aside. 
10. Pour lemon curd over the cake, chill in the fridge for 3-4 hours.

柠檬优格沙拉酱 Lemon Yogurt Dressing





















柠檬优格沙拉酱

材料 :

柠檬皮屑  1个
柠檬汁  30克
原味优格  100克
太阳花油 / 橄榄油  20克
蜂蜜  30克
盐,黑胡椒粉 调味


做法 :  将所有材料混合搅拌均勻即可。

注 : 可依照个人喜爱调整份量



Lemon Yogurt Dressing

Ingredients :

1 lemon zest
30g lemon juice
100g plain yogurt
20g sunflower oil / olive oil
30g honey
salt,black pepper to taste


Method :  Whisk all ingredients in a bowl. 

Notes : Adjust to according to your preference.

优格烤鸡 Baked Yogurt Chicken







最近爱上烤鸡,只因步骤简单,只需前一天把调味料混合好,
加入鸡肉,放入冰箱腌制。
隔天再取出放入烤箱烤熟,既方便又省时。














 

这道美味的优格烤鸡食谱取自May家的烤鸡料理,谢谢她的好分享。

优格烤鸡

材料 :
4只 全鸡腿

腌料 : (混均)

酸奶/优格  150克
柠檬汁  2大匙
鲜奶  1大匙
  1大匙 黄糖  2大匙
盐  2茶匙
红辣椒粉  1大匙
黑胡椒粒  1大匙(压碎)
姜末  15克
黄姜粉  1/2茶匙
香茅  2支(切碎)
意大利混合香料  1茶匙
小茴香  1/2 茶匙

做法 :


1. 将鸡腿肉洗净,沥干水份,备用。
2. 将所有腌料混合,搅拌均匀。然后,加入鸡腿肉腌制6个小时或隔夜。
3. 烤盘铺上锡纸,将鸡腿肉摆放在烤盘架上,送入预热烤箱以180度烘烤50分钟或熟 (半途烘烤时, 取出翻面,涂熟腌料)


Baked Yogurt Chicken

Ingredients:
4 chicken whole legs

Marinade:(mixed)


150g yogurt

2 tbsp lemon juice
1 tbsp fresh milk
1 tbsp oil
2 tbsp brown sugar

2 tsp salt
1 tbsp red chili powder
1 tbsp black pepper (crush it)
15g chopped ginger

1/2 tsp turmeric powder
2 lemongrass (chopped)
1 tsp italian mixed herbs

1/2 tsp cumin seeds 


Method:
 
1.  Wash chicken and pat dry.  
2.  Rub chicken with marinade for at least 6 hours or overnight.
3.  Line baking tray with aluminium foil and place chicken onto a baking rack.  Bake in preheated oven for 180C for 50 minutes until chicken is golden brown and well roasted. (Brush chicken with some dripping while roasting.)

低脂橙味优格蛋糕 Low Fat Orange Yogurt Cake




为了消耗冰箱里两大罐优格,找到这款低脂蛋糕,
食谱的优格量多奶油少,正合我意呀。















低脂橙味优格蛋糕

材料 :

低筋面粉  250克
发粉  1茶匙
苏打粉  1/2茶匙
盐  1/2茶匙
奶油  70克, 软化
橙皮削  2粒
细糖  150克

蛋  2粒,打散
原味优格  1杯 (245克)
香草精  1茶匙
橙汁  2汤匙



做法 :

1. 把面粉,发粉, 苏打粉和盐过筛后, 混合, 备用。
2. 再把优格, 橙汁和香草精混合一起, 备用。
3. 用电动搅拌器, 把牛油和橙皮削搅拌1分钟,加入细糖,以高速搅拌大约3分钟。
4. 慢慢加入蛋液, 搅拌大概2分钟。
5. 用低速搅拌, 加入1/3的粉类, 再转去中速, 加入1/2的优格糊。
6. 用低速, 加入剩下一半的粉类, 再以高速, 加入全部剩下的优格糊。
7. 转回去低速, 拌入剩余的粉类。
8. 搅拌均匀, 倒入烤模里
9. 用180'C烘烤大约45分钟至蛋糕熟透即可。 







Low Fat Orange Yogurt Cake 

Ingredients:

250g cake flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
70g butter,soften at room temperature
zest of  2 orange
150g sugar

2 eggs,lightly beaten
1 cup plain,non-fat yogurt (245g)
1 tsp vanilla essence
2 tbsp orange juice



Method:

1. Sift together cake flour,baking powder,baking soda and salt. Set aside.
2. In a bowl,mix together yogurt,vanilla essence and orange juice.
3. With an electric mixer,beat butter and orange zest for 1 min. Add in sugar and beat on high speed for about 3 mins.
4. Add in eggs gradually,about 1 tablespoon at a time,beat constantly for about 2 mins.
5. On low speed,beat in 1/3 of the flour mixture. On medium-high speed,beat in 1/2 of the yogurt mixture. 

6. On low speed,beat in half of the remaining flour mixture. On high speed,beat in the remaining yogurt mixture. 
7. On low speed,beat in the rest of the flour mixture.
8. Scrape into prepared pan and bake in a preheated oven of 180'C for 45 mins or until a toothpick inserted into the centre comes out clean.

香蕉隔夜燕麦 Banana Overnight Oats























香蕉隔夜燕麦

材料:

燕麦片  6tbsp(45g)
牛奶  1/2杯
优格/酸奶  1/2杯
奇异籽  1tbsp
香蕉  1-2条(切片) 

烤香杏仁片,瓜子 适量



做法:

1. 用一个干净(烧水烫过并擦干)的玻璃瓶,放入燕麦片,奇异籽和优格。 
2. 之后慢慢加入牛奶直到近3/4满,用干净的勺子轻轻搅拌把瓶底下的燕麦片和牛奶拌均。
3. 最后加入准备好的水果,再搅拌两三次,盖上盖子然后放进冰箱冷藏一夜。
4. 隔天当你要享用时就以随意添加一些喜爱的果仁和蜂蜜调味,搅拌后就能享受一份健康又有营养的早餐了。 





Banana Overnight Oats


Ingredients:

6tbsp (45g) rolled oats
1/2cup fresh milk
1/2cup plain or greek yoghurt
1tbsp chia seeds
1-2 banana (sliced) 

some roasted almond flakes and sunflower seeds


Method: 

1. Using a clean sterilized glass jar, add rolled oats, chia seeds and yoghurt. 
2. Pour in milk till almost 3/4 full, stir the mixture with a clean spoon to loosen the oats at the bottom of the jar.
3. Lastly add in your preferred fruits (remember to rinse with water and pat dry with kitchen paper towel) and give a few stirs.
4. Cover the jar and leave the mixture overnight in the fridge.
5. In the morning, before having your oats you can top it with extra sliced banana and some roasted almond plus drizzle of honey (optional) to sweeten the taste.

Fruit Pastry Cake 水果蛋糕

 
 
 
 
 
 
 
懒了几天,终于整理好这帖子,嘻嘻。。。
喜欢用这蛋糕食谱,也做了无数次。
水果加牛油蛋糕,吃起来也不腻。
 
 
 
 








 
 
取自这里
 
水果蛋糕
 
材料 : 8寸圆模
 
牛油  100g
细砂糖  120g
原味优格  50g
全蛋  3个(室温)
柠檬皮屑  1tsp
低筋面粉  210g(过筛)
发粉  1tsp
 
(水果比如草莓,蓝莓,桃,香蕉,苹果,黄梨等等)
 
 
做法:
 
1. 水果切好,若用罐头水果洗掉糖水,抹干,备用。
2. 牛油、优格及糖打至松发。
3. 打入鸡蛋,一次一个,充分打发。
4. 加入柠檬皮屑。
5. 拌入面粉,低速度拌至均匀即可倒入烤盘或纸杯里。
6. 把水果铺在面糊上面,别按入面糊里。
7. 放入预热的烤箱170度,烤60-70分钟即可。
8. 待凉后筛上适量糖粉做装饰。
 
 
 
Fruit Pastry Cake
 
Ingredients: 8-inch round cake pan

100g butter
120g caster sugar
50g plain yogurt
3 eggs, room temperature
1 tsp lemon zest
210g plain flour,
sifted
1 tsp baking powder

(You can use strawberries, blueberries, peaches, bananas, apples, pineapple.)


Method:

1. Wash, cut and drain fruits, if using canned fruits, wash the fruits to remove the syrup and pat dry.
2. Line the cake pan with parchment paper.
3. Beat butter, sugar and yogurt till pale and fluffy.
4. Add egg one at a time, combine well.
5. Add lemon zest. Mix to combine.
6. Fold in flour and baking powder, slowly combine and mix till smooth.
7. Pour batter into prepared pan and smooth out the top with a spatula.
8. Arrange fruits on top of the batter, don’t press the fruits down into the batter.
9. Bake in preheated oven at 170C for 60-70 minutes or until a skewer comes out clean.
10. Leave the cake to cool in the pan for about 5-10mins. Unmold and transfer to wire rack to let cool completely. 
11. Dust the cake with some icing sugar if desired.

圣诞花环优格软面包 (一次发酵法)Christmas Wreath Yogurt Soft Bread (Just Once Fermentation)



















配方取自Sharon@爱厨房的幸福之味

圣诞花环优格软面包 (一次发酵法) 

材料 : 做2个花环

高筋面粉  300g 
砂糖  45g
盐  3g
即溶酵母  3g
鸡蛋  50g
原味优格  100g
全脂牛奶  60g
无盐牛油  30g

~由于不同品牌的面粉,其吸水量有所不同,所以请预留30g的牛奶,慢慢加入。
~牛油可换成各种液体油(30g),直接加入材料里一起揉。 


做法 :
 

1. 将全部材料(牛油除外)搅拌成团。
2. 加入牛油,搅拌至光滑有薄膜。
3. 直接分割成6等份,休面10分钟。
4. 擀成长橢圆形,卷起,双手在中间慢慢往外搓长。
5. 将3条面条结成辫子,把辫子头尾连接成圆环状,进行发酵至2倍大。
6. 涂上蛋液,放入预热160°C的烤箱, 烤25-30分钟。  




Christmas Wreath Yogurt Soft Bread (Just Once Fermentation)
 
Ingredients : makes 2 wreaths
 
300g High Protein flour/Bread Flour
45g sugar
3g salt
3g Instant yeast
50g Egg or 1 large egg 
100g Plain yogurt
60g Full cream Milk/Fresh Milk
30g Unsalted Butter




Method :

1. Mix all the ingredient (except butter) until smooth dough.
2. Add butter continue to knead until smooth and elastic dough.
3.
Divide dough into 6 portions, then allow to rest for another 10 minutes. 
4.
Flatten the dough into a rectangle shape and roll it up.

5. Using both hands, slowly roll the dough into long rope shape and braid the 3 ropes, pinch the 2 ends together and shape into wreath shape.
6. Proof till the dough in double size.
Brush egg wash.

7. Bake in a preheated oven at 160°C for 25-30minutes.
