旺来曲奇 Ong Lai Cookies







春节装饰最常见的就是黄梨(旺来)
所以今年的年饼也来款旺来形曲奇



















旺来曲奇

材料 :

牛油  180克
糖粉  80克
低筋面粉  270克


做法 :

1. 牛油加糖粉打发至变白,入面粉拌成均匀的面团。
2. 将面团擀成约4mm的厚度,用曲奇模具印出形状,移至铺了油纸的烤盘上。
3. 放入预热160度烤箱,烤20分钟至熟。




Ong Lai Cookies

Ingredients :

180g butter
80g icing sugar
270g plain flour/cake flour



Method :

1. Cream butter and sugar until light and fluffy. Sift in flour and mix well to form a dough.
2. Roll the dough to a thin sheet (4mm) cut out using a cookie cutter,transfer cookies to prepared baking sheets. 
3. Bake in preheated oven at 160 degrees C for 20 minutes.

Nestum 麦片酥饼 Crispy Nestum Cereal Cookies



























Nestum 麦片酥饼

材料 :

Nestum 麦片  50克
牛油  100克

糖粉  30克
面粉  60克
玉米粉  40克
发粉  1/4茶匙
苏打粉 1/8茶匙


做法 :


1. 
把牛油和过筛的糖粉用搅拌机搅匀至松发。
2. 
加入面粉玉米粉,发粉苏打粉拌匀。

3. 加入Nestum 麦片拌成均匀面团。
4. 把面团分割小等份,搓圆,放入烤盘。
5. 放入预热烤箱160°C,烤20分钟或金黄色。 



Crispy Nestum Cereal Cookies

Ingredients :

50g Nestum cereal
100g butter, softened at room temperature
30g icing sugar, sifted
60g all purpose / plain flour
40g cornflour
1/4 tsp baking powder
1/8 tsp baking soda


Method :

1. Beat butter, and sugar until combined and fluffy.
2. Sift flour, cornflour, baking powder and baking soda into the butter mixture. 
3. Add in Nestum cereal and use a spatula to mix until combined.
4. Roll the dough into ball shapes,arrange into baking tray.
5. Bake in preheated oven at 160°C for about 20 minutes or until golden brown.

元宝凤梨酥 Pineapple Tarts







年饼少不了凤梨酥,换成元宝形,更增加喜庆















凤梨

材料 :


牛油  180
糖粉  30

面粉  150

粟米粉  100

奶粉  50


内馅 : 黄梨馅 (每份20克)


做法 :
 


1. 牛油加糖粉搅拌均匀,加入过筛的粉类拌成团。
2. 将面团分成每份30克,包入一份黄梨馅,搓圆。
3. 放入模型里印出形状,排放在铺了烤纸的烤盘上。
4. 放入预热烤箱160度,烘烤25分钟或至表面金黄色。



Pineapple Tarts 

Ingredients: 

180g butter
30g icing sugar
150g plain flour / all purpose flour 
100g corn flour
50g milk powder

Pineapple filling (20g each) 


Method :

1. Mixed butter and icing sugar till combine,fold in the sifted flour mix till become a soft dough.
2. Roll dough into ball 30g each,wrap in the pineapple filling.
3. Place dough inside the mould,flatten dough to conform to shape of mould. 
4. Remove blueberry tarts from the mould and arrange on the baking tray line with baking sheet.   
5. Bake in preheated oven at 160C for 25mins or till golden brown.

番婆饼 Kuih Bangkit







已多年没做番婆饼,今年先让它插队。。














番婆饼

材料

A
500g木薯粉、100g粟米粉、5-6片班兰叶,剪段(炒时,可以用这份量~木薯粉550g+粟米粉150g去炒)
B
3粒蛋黄、180g幼糖
C
250g新鲜浓椰浆


做法

1
)把木薯粉、粟米粉和班兰叶放入镬中用中火炒至轻及干,炒约2025分钟,把炒过的粉连同班兰叶静放5-7天后才使用。

)蛋黄加幼糖用搅拌器拌打至浓稠和浅黄色,加入浓椰浆搅匀。

)加入已过筛的粉用搅拌器打至成一软团。

)模具沾上少许粉,然后将(3)分成小份,厌入模型内,切掉多余的粉团后敲出,排放在已洒上少许粉的烤盘上,放入预热烤箱,以150度烤20分钟至熟为止。


温馨提示

粉必须预先炒过,放上5-7天后的粉,才容易吸收椰浆,这样才可以做出酥松和入口即化的口感。
食谱上的份量是用到600g炒好已过筛的粉。
剩余的粉可以留下当手粉用。
准备多余的椰浆,当面团太干时可以加入。
也可以将面团擀成薄片,用饼模切出形状。

猪年大吉 ~ 德国酥饼 German Butter Cookies







2019 猪年到,好运到,猪年吉祥
德国酥饼也换成猪猪形














德国酥饼 

材料 :

牛油  250g
糖粉  80g
马铃薯粉  250g
低筋面粉  160g


做法 

1.  
把牛油和过筛的糖粉用搅拌机搅匀至发白。
2.  
加入马铃薯粉和低粉拌成均匀面团。
3.  
把面团平均分成每份10克,搓圆,放上装饰
4.  放进预热160'C 的烤箱烤15-20 分钟。
(温度和时间请依个人烤箱调整)




German Butter Cookies
 
Ingredients :
  
250g butter
80g icing Sugar (sifted)
250g potato starch
160g plain flour/cake flour


Method : 

1. Beat butter and icing sugar till light and fluffy.
2. Sift in potato starch
flour and poppy seedsmix well combine.
3. Divide dough into 10g each and roll into balls
shape into small balldecorate each with KoKo Krunch, black sesameas and chocolate chip.
4. Bake in preheated oven at 160‘C for 15-20minutes.

花生饼 Peanut Cookies







农历廿九也是西方情人节
在这充满温馨又浪漫的节日祝福大家情人节甜蜜快乐
Happy Valentine's Day



















花生饼

材料 :

花生碎  200g (炒香,去衣,搅碎)

面粉  300g
糖粉  150g
盐  1/2tsp
花生油  200ml

蛋黄液 (扫面用)



做法 :

1.  花生碎、糖粉及面粉混合均匀。
2.  徐徐倒入花生油,拌成面团即可。
3.  搓成小圆球,排在已铺上烤纸的烤盘上,刷上蛋黄液。
4.  预热烤箱160度,烘烤20-25分钟。





Peanut Cookies

Ingredients :

200g peanuts ( toast, skinned and blend till fine)
300g plain flour
150g icing sugar
1/2 tsp salt
200ml peanut oil

egg yolk for glazing


Method :

1. In a mixing bowl,combine ground peanutsflouricing sugar and salt. 
2. Add in oil,mix to form a dough.
3. Shape into small balls,place on a lined baking tray,brush the surface with egg yolk. 
4. Bake in preheated oven at 160C for 20-25 minutes.

蜂巢饼 Kuih Loyang





买了蜂巢模很久了,却不敢动手做蜂巢饼
因为很怕炸
今年想好了怎样也要炸一次的蜂巢饼,还好顺利完成











蜂巢饼

材料 :

木薯粉  250克
粘米粉  250克
细砂糖  300克
蛋  5个
浓椰浆  400毫升
清水   250毫升
白芝麻  少许


做法 :

1. 把鸡蛋、糖、椰浆、清水和粉类拌均匀过滤。 加入芝麻拌匀
2. 烧热油,先将巢模放入热油中热泡,取出热模浸入面糊中至9分满,再放入热油里炸。
3. 轻轻的摇晃模子让蜂模。
4. 继续炸至金黄色取出,放在吸油纸上吸除多余的油份,即可



Kuih Loyang

Ingredients :

250g tapioca flour
250g rice flour
300g caster sugar
5 eggs
400ml thick coconut milk
250ml water
some sesame seeds


Method :

1. Combine eggsugarcoconut milkwater and flour,stir well. Strain it,add in sesame seeds,mix well.
2. Heat up oil in a wok,put brass moulds in the hot oil to heat up,dip hot mould into batter until 90% full,return the mould to the hot oil.
3. Shake to release from mould and fry until golden brown,remove from hot oil,drain on kitchen paper. Serve.

鸡仔饼 Chicken Biscuits










香脆薄薄的鸡仔饼,我好喜欢,
所以今年年饼里多了它












鸡仔饼

材料

A
南乳  2
牛油  90
  1
麦芽糖  1汤匙


B
低筋面粉  225
糖粉  90
发粉  1茶匙
胡椒粉  1茶匙
五香粉  1茶匙
  半茶匙
冬瓜糖  70
蒜茸  30
白芝麻  50
黑芝麻  50


做法 

1. 把材料(A)搅拌均匀。
2. 加入材料(B)一起搅拌成均匀的面团。
3. 取出一小面团,放在铺了油纸的烤盘上,压成薄片。
4. 预热烤箱,150度烘烤15分钟至金黄色即可。




Chicken Biscuits

Ingredients :

(A)
2 cubes red fermented bean curd (nam yue)
90g butter
1 egg
1 tbsp maltose


(B)
225g plain flour
90g icing sugar
1 tsp baking powder
1 tsp pepper
1 tsp five spice powder
1/2 tsp salt
70g candied winter melon, finely chopped
30g grated garlic
50g white sesame seeds
50g black sesame seeds



Method :

1. Mix all ingredients (A) in a mixing bowl.
2. Add in ingredients (B) mix to form a dough.
3. Divide the dough into small portion, place on a parchment lined baking tray, roll out the dough into thin sheets.
4. Bake in a preheated oven at 150C for 15 mins or until golden brown.

蓝莓果酱牛油饼 Blueberry Jam Butter Cookies





















蓝莓果酱牛油饼

材料 :

牛油  200克
糖粉  50克
低筋面粉  150克
玉米粉  50克


蓝莓果酱  适量


做法 :

1. 将牛油和糖粉搅打发至蓬松。 
2. 筛入低筋面粉和玉米粉,用橡皮刮刀翻拌均匀。 
3. 将面糊装入挤花袋,在烤盘上挤出花状,中间挤上蓝莓果酱。
4. 放入预热烤箱,170°C烤15-20分钟即可。



Blueberry Jam Butter Cookies

Ingredients :

200g butter
50g icing sugar

150g low protein flour
50g corn flour


some blueberry jam
 


Method :

  

1. Beat butter and icing sugar until light and fluffy.
2. Sieve the low protein flour and corn flour together,fold into the batter.
3. Use the spatula mix until a dough is formed.
4. Spoon batter into a piping bag fitted with nozzle,pipe out the batter on baking tray,add the blueberry jam into the center of cookies.
5. Bake in preheated oven at 170°C oven for 15-20 mins.
