山药薏仁吐司 Chinese Yam and Job's Tears Toast



























山药薏仁吐司

材料 : 

高筋面粉  220克

山药薏仁粉  80克
细砂糖  30克
盐  2克
即溶酵母  5克
牛奶  150-180克
鸡蛋  1个
奶油  30克


做法 :

1. 所有材料混合(外),搅拌至光滑状
2. 加入奶油继续搅拌,搅拌至扩展阶段,进行初步发酵1个小时。
3. 面团分割成3等份,滚圆擀开卷起2次。
4. 排入吐司模,进行最后发酵至9分满。 
5. 放入预热烤箱里以180度烘烤35-40分钟。






Chinese Yam and Job's Tears Toast

Ingredients :


220g bread flour

80g Chinese Yam and Job's Tears powder
30g sugar
2g salt
5g instant dry yeast
150-180g milk
1 egg
30g butter


Method :

1. Mix all the ingredient (except butter) until smooth dough.
2. Add butter continue to knead until smooth and elastic dough,proof the dough for 1 hour. 
3. Divide dough into 3 portions,roll out flat and swiss roll tightly,repeat twice.
4. Place into greased loaf pan,allow to proof until dough reaches 90% of height of pan.
5. Bake in preheated oven at 180 C for 35-40 minutes.

蔓越莓夺命软吐司(一次发酵法) Cranberries Killer Soft Toast(Just Once Fermentation)





这次想念吐司了想做就做的性格
就是喜欢一次发酵做法的食谱










蔓越莓夺命软吐司

材料:450克吐司模

高筋面粉  260克
即溶酵母  3克
蛋液  50克
鲜奶  100-130克
细糖  30克
盐  2克
奶油  30克

蔓越莓  60克



做法 :

1. 所有材料混合(外),搅拌至光滑状
2. 加入奶油继续搅拌,搅拌至扩展阶段,加入蔓越莓揉均匀。
3. 面团分割成3等份,滚圆擀开卷起2次。
4. 排入吐司模,进行最后发酵至9分满。 
5. 放入预热烤箱里以170度烘烤45-50分钟,面包表面上色后,盖上一张铝箔纸。

巧克力蛋糕面包 Chocolate Cake Bread

















巧克力蛋糕面包

面团材料 :

高筋面粉  150克
砂糖  30克
盐  2克
即溶酵母  2克
鸡蛋  25克
原味优格  50克
牛奶  30克
无盐奶油  15克




蛋糕材料 :

蛋黄  2个
玉米油  20克
牛奶  30克
巧克力粉  10克
低筋面粉  30克


蛋白  2个
细砂糖  30克
 




做法 :

1. 将全部材料(奶油除外)搅拌成团。
2. 加入奶油,搅拌至光滑有薄膜。
3. 取出面团,擀平卷起,放入涂了油的吐司模里,进行发酵至4-5分模
4. 准备蛋糕糊,蛋黄加玉米油和牛奶,用打蛋器搅拌均匀。
5. 筛入低粉和巧克力粉搅拌成均匀的蛋黄糊。
6. 蛋白打起泡状,分次加入细砂糖,打发成尾端挺立的蛋白霜。
7. 将1/3蛋白霜加入蛋黄糊中,用橡皮刮刀拌匀。
8. 然后倒入其余的蛋白霜,混合拌成均匀的面糊。

9. 将面糊倒入吐司模中,放入预热170°C的烤箱, 烤40分钟。  




 

Chocolate Cake Bread

Bread ingredients :
 
150g high protein flour / bread flour
30g sugar
2g salt
2g instant yeast
25g egg 
50g plain yogurt
30g fresh milk
15g unsalted Butter
 
 
 
Cake ingredients : 
 
2 egg yolks
20g corn oil
30g milk

10g cocoa powder
30g cake flour 



egg whites
30g castor sugar
 
 

Method :

1. Mix all the ingredient (except butter) until smooth dough.
2. Add butter continue to knead until smooth and elastic dough.
3.
Flatten the dough and roll it up,place into greased loaf pan,allow dough to rise until the dough reaches 4-5 height of the loaf pans.

4. Preparing the cake batter,combine egg yolks with corn oil and milk in a mixing bowl.
5. Sift in cake flour and cocoa powder,mix well,set aside.
6. Beat egg white until frothy and add in the sugar in 3 batches. Beating till shiny peaks.
7. Add 1/3 egg white into egg yolk batter and fold well.
8. Pour the batter back to the 2/3 egg white and fold into a smooth batter.
9. Pour the batter into the loaf pan,bake in a preheated oven at 170°C for 40minutes.

黑芝麻花型面包 Black Sesame Flower Shaped Bread

























面包体食谱请看这里

黑芝麻内馅

黑芝麻粉  200克
糖粉  120克
奶油  80克
 
所有材料混合均匀,备用。

Black Sesame Filling

200g black sesame powder
120g icing sugar

80g butter

Mix together all ingredients until combined and set aside.

咖喱面包鸡 Curry Chicken Bread




这次面团配方,依然是选用一次发酵法的夺命软面包。














咖喱面包鸡 

咖哩鸡材料: 

鸡  半只(切块)
马铃薯  3个(去皮,切块)
红葱头 15粒(剁碎)
香茅  6支
Baba's 鸡肉咖哩粉  6汤匙
辣椒粉  2汤匙

新鲜椰浆  250毫升
清水  250毫升
咖哩叶  4支(取叶)
盐和糖 (各适量)

水煮蛋  1个 


做法: 

1. 热油锅,爆香红葱头,咖喱粉,辣椒粉,香茅和咖哩叶。
2. 加入鸡肉块和马铃薯,拌炒约5分钟。 
3. 倒入清水,加锅盖焖煮至鸡肉熟透和马铃薯变软。
4. 最后加入椰浆继续煮10分钟,加入适量的盐和糖调味,即可盛起。
5. 待凉后,把咖哩鸡和水煮蛋用锡纸包好。 



面包体食谱取自这里
 
1. 把面团擀开,盖在已用锡纸包好的咖哩鸡上,把底部的面团收口捏紧。
2. 收口朝下,放在铺了烤纸的烤盘上,最后发酵45分钟。 
3. 预热烤箱,以180度烤约30-35分钟,,面包表面上色后,盖上一张铝箔纸。 
4. 取出面包,趁热刷上一层牛油。 



Curry Chicken Bread 

Curry Chicken Ingredients 

half a chicken,cut into pieces
3 potatoes,peeled and cut into chunks
15 shallots,chopped
6 stalks lemongrass
6 tbsp Baba's chicken curry powder
2 tbsp chili powder
250ml fresh coconut milk
250ml water
4 sprigs curry leaves,use only the leaves
salt and sugar to taste

1 hard-boiled egg 


Method 

1. Heat up oil and stir fry the chopped shallots,curry powder,chili powder,lemongrass and curry leaves.
2. Add chicken and potatoes,stir fry for about 5 minutes.
3. Add water,cover with lid and simmer until the chicken are cooked and the potatoes are tender. 
4. Add coconut milk and cook for 10 minutes,add salt and sugar to taste. Dish up.
5. Wrap curry chicken and boiled egg in aluminium foil tightly. 



Bread recipe from here 

1. Roll the dough into rectangle shape and cover onto wrapped curry chicken,seal the edges together,pinch and seal tightly. 
2. Place onto a lined baking tray and proof for 45mins.
3. Bake in preheated oven at 180°C for 30-35 minutes or until golden brown.(Cover bread surface with foil if it browns too quickly)
4. Remove from oven, brush with melted butter.

夺命肉松芝士软面包(一次发酵法) Pork Floss Cheese Killer Soft Bread (Just Once Fermentation)





做了这夺命面包,现在是越来越喜欢一次发酵法的食谱。

 









夺命肉松芝士软面包
材料
高筋面粉  260克
即溶酵母  3克
蛋液  50克
鲜奶  100-130克
细糖  30克
  2克
奶油  30克

内馅 : 肉松
表层 : 美乃滋,芝士条
 

做法 :

1. 所有材料混合(外),搅拌至光滑状
2. 加入奶油继续搅拌,搅拌至扩展阶段
3. 面团揉好后,分割成60g一份的小面团,滚圆擀成圆面片
4. 包入肉松,收口捏紧。放入纸托,进行最后发酵至双倍大。
5. 挤上美乃滋,撒上芝士条。
6. 放入预热烤箱里以170度烘烤20-25分钟,面包表面上色后,盖上一张铝箔纸。 




Pork Floss Cheese Killer Soft Bread 
Ingredients :
260g bread flour
3g instant dry yeast
1 egg (50g)
100g-130g milk
30g sugar
2g salt 
30g butter

Filling : pork floss
Toppingmayonnaise,mozzarella cheese   

 

Method :

1. Mix all the ingredient (except butter) until smooth dough.
2. Add butter continue to knead until smooth and elastic dough.
3. Divide 60g each dough into equal small portion. 
4. Flatten dough and wrap in the pork floss and place it into baking cups.
5. Squeeze mayonnaise and sprinkle with mozzarella cheese onto top of bread
6Bake in preheated oven at 170 C for 20-25 minutes. (Cover bread surface with foil if it browns too quickly)
