马来栈炸鸡 Belacan Fried Chicken















马来栈炸鸡

材料: 

鸡肉块  约500克
炸油   适量 
 
 
腌料:

烘香马来栈粉   3汤匙
蒜头汁   1汤匙
葱头仔汁   1汤匙
黄姜汁    1茶
盐   1汤匙
糖   1汤匙
黍粉   1汤匙


**  料可以随着个人的口味加减


做法:

1.  将鸡肉块加入腌料拌匀,放入冰箱腌隔夜或至少2小时。
2.  烧热食油,放入腌好鸡肉,慢火炸至金黄熟透,捞起,滤干油份即可。 




Belacan Fried Chicken 

Ingredients : 

500g chicken,cleaned and cut into pieces

cooking oil for deep-frying


For marinate Adjust to according to your preference.

3tbsp grilled belacan 
1tbsp garlic juice
1tbsp shallot juice
1tsp fresh turmeric (kunyit) juice
1tbsp salt 
1tbsp sugar
1tbsp corn flour


Method : 

1. Marinate chicken for at least two hour. 
2. Heat up oil,deep fry the chicken until cooked and golden brown. Dish and drian.

粟米榨菜番茄汤 Sweet Corn with Pickled Mustard Tuber Soup















粟米榨菜番茄汤

材料 :

粟米  2根
四川榨菜  1个
番茄  2粒
淮山  20克
排骨  300克
清水  2公升 或 适量


做法 :

1. 排骨洗净, 用沸水川烫过,捞起备用。
2. 榨菜用清水冲洗干净,切片。
3. 粟米切段,番茄切四块。
4. 把所有材料放入汤锅里,大火煮滚后,转小火煮约2小时即可



Sweet Corn with Pickled Mustard Tuber Soup

Ingredients : 

2 sweet corn
1 sichuan pickled mustard tuber
2 tomatoes
20g huai shan
300g pork ribs
2 liters water


Method :

1. Wash pork ribs,blanch in boiling water. Remove and drain.
2. Rinse pickled mustard tuber and slice into thin slices..
3. Sweet corn cut into chunks,tomato cut into 4 pieces.
4. Put all ingredients into soup pot. Bring to a boil in high heat,then lower the heat and continue to cook for 2 hour.

红豆碱水粽 Red Bean Alkaline Dumplings





















红豆碱水粽

材料: 可做30-35个

糯米  1公斤
碱水   4汤匙 
油  4汤匙 
粽叶 
红豆沙  适量
 
 
做法 :
 
1. 干粽叶泡水3-4小时软化 ( 中间换2次水 ),用刷子两面刷洗干净,剪掉叶梗。
2. 糯米洗净,用清水浸泡4小时沥干
3. 糯米沥干水份,加入碱水和油,搅拌均匀,待用。
4. 粽叶折成斗形,舀入适量糯米中间放红豆再盖上适量的糯米盖上粽叶,包成棕形绑上草绳。
5. 煮滚一大锅水,把裹好的粽子下锅,水要盖过粽子,煮3小时,至糯米熟软即可取出,吊起沥干水份。 
 
 
Red Bean Alkaline Dumplings 
 
Ingredients

1kg glutinous rice
4tbsp alkaline water
4tbsp cooking oil
bamboo leaves
hemp string 
red bean paste  


Method

1. Bamboo leaves, soaked for 3-4 hourswashed and change water in between for two time. 
2. Wash glutinous rice and add watersoaked for 4 hours.
3. Drain the glutinous riceadd in alkaline water and oilmix well and set aside.
4. Take a bamboo leaffold into an inverted coneadd in some glutinous rice then add in read bean pastetop with some glutinous rice to cover the red bean paste then wrap accordingly. 
5. Using a big potcook half pot of water. Once water is boiledplace in all the wrap dumplings and let it cook for at least 3 hours.Remove from water and hang it uplet it air dry and cool down.

香辣烤鸡 Ayam Percik





















这道烤鸡收在存库里也有段时间了,食谱取自厨苑食谱,谢谢May的好分享。

香辣烤鸡
 
材料
8个鸡翼, 2个全鸡腿

腌料 :
蒜  3 瓣
小葱头  80克
香茅  5支
椰浆  120克
黄姜  40克
姜  40克
清水  2大匙 + 亚参膏  1 1/2 大匙(取水)
红辣椒  4条
油  3大匙
糖  1+ 1/2 大匙
盐  1 大匙
 

做法
 
1. 把腌料放入搅拌机里搅碎,然后加入鸡块腌制6小时或隔夜。
2. 烤盘铺上锡纸,把鸡块摆放在烘盘架上,送入预热烤箱里以180度烘烤40分钟至金黄色或熟。(半途烘烤中, 亦可取出翻面, 涂上酱料) 




Ayam Percik
 
Ingredients
8 chicken wings, 2 whole chicken legs 
 
Spices
3 cloves garlic
80g shallots
5 stalks lemongrass, used bottom part
40g turmeric
40g ginger
4 red chillies
120g coconut milk
2 tbsp water + 1 1/2 tbsp asam paste (Squeeze out juice)
3 tbsp cooking oil
1+1/2 tbsp sugar
1 tbsp salt


Method
 
1. Put all spices ingredients into a food processor and blend into paste.  Rub the prepared spices paste all over chicken whole legs or chicken wings and marinate for overnight or at least 6 hours.
2. Place onto a baking tray lined with aluminium foil,bake in preheated oven at 180C for 40 minutes until golden brown or cooked. (Brush chicken with spices paste while roasting)

金瓜米粉 Pumpkin Fried Bee Hoon (Fried Rice Vermicelli with Pumpkin)






金瓜米粉在家里餐桌出现过无数次,
看回之前部落格的记录,才发现没在这出现过。
今天就贴上这道简易金瓜米粉做个记录










金瓜米粉

材料 : (3-4人份)

南瓜  300克
米粉  200克

虾仁  150克 (去壳,挑去泥肠,洗净备用)  
虾米  1-2汤匙 (泡软)
蒜茸  1汤匙
青葱  适量 (切粒) 

调味料 : 蚝油,生抽,胡椒粉 


做法 :

1. 南瓜去皮,切丁或刨成丝。
2. 米粉泡软,捞起沥干。

3. 起油锅,爆香虾米和蒜茸。
4. 加入虾仁和南瓜拌炒至南瓜变软。
5. 接着放入米粉,适量的水和调味料,翻炒至干。

6. 盛起,撒上青葱粒即可。


 

Pumpkin Fried Rice Vermicelli

Ingredients :

300g pumpkin
200g rice vermicelli

150g prawns,shelled and deveined
1-2 tbsp dried shrimps,soaked
1tbsp garlic 

spring onion,diced

Seasoning : oyster sauce,light soy sauce,pepper


Method :

1. Peeled pumpkin,cut into cube or cut into thin strips.
2. Soak the rice vermicelli in water until soft,drain and set aside.
3. Heat up oil,saute garlic and dried shrimps until fragrant.
4. Add in pumpkin and prawns,stir-fry until pumpkins soften.
5. Add in the rice vermicelli,water and seasoning,stir-fry until dry. 

6. Dish up,sprinkle spring onion on top.
